Have ready n bowl of freshly picked over
terries, which havo been crvshed and
sweetened and a tiny pinch of salt
added. I'lace tho hot toast upon a largo
meat platter which has been previously

you would for short cako. After all Is
finished placo in a hot oven for three or
four minutes nnd serve.

way making an appotlzingias well as
delicious breakfast nnd luncheon dish.

Made From Strawberries.

that ono will havo on hand a pint or so
of strawberries that can hardly be passeo,
still thoy have lost their prlstlno fresh
ness, and show symptoms of becoming
soft. Well, tho best way to servo them
Is to heat thorn through In a littlesyrup,
not letting them lose tholrehnpo or their
color. Then put them into a pudding
dish and cover them with u half-inch
layer of bread crumbs.
' Mako a custard of four eggs and milk,
seasoning It with a llttlo grated nutmeg,
injur it into the dish with tho berries
nnd bread crumbs, and hako it for an
hour. It may bo served cither hot or
cold, and you will havo reason to be
pleased with yourself for having turned
out an appetizing swcot, and ono that
will help you to foster that pet belief of
everyJhoUBckeepor, namely, that you ore
past mistress in tho nrt of domestic
economy.
Another dessert dainty can be made
by mashing a ituart of strawberries with
a cupful of powdered sugar. I0t them
stand for half an hour, and mako a syrup
of ono cupful of sugar boiled with ono
cupful of water for about twenty min
utes, then mix with it a scant table
spoonful of granulated gelatine dissolved
in a ctiphil ol water. laku tlio syrup
from tho flro, and strain tho strawberries
through a line sieve into It. Stand tho
bowl, containing tho mixture, on the
Ice, and whip briskly for live minutes,
then add tho whipped whites of four
eggs, and continue tho beating until it
thickens, then turn into small moulds,
chill, and servo with whipped cream.
