Cooking SchooU Abtoad,
The problem of higher education for
women is being itgituted in Germany in
r.ttlior a BurprlB.ng form. Tho German
m.iduhun doeim't know much about
higher mathematics and Chaldalc as a
rule, but chu has a world-wide reputa
tion for domestic virtues; and it Is be
wildering to 11 nil tho lawuuikeit) of her
land crying out for compulsory courser?
of culinary Instruction. A law recently
proposed requires every woman, on at
taining her twentieth year, to produce a
Cdrtilieutu that elio has Butiufactortly
completed u severe course in cooking.
One cannot help wondering about tho
doincstie experience of tliu man who put
forward the proposition. Perhaps he
had suffered kventy from the lack of
Bitch u law, and Iiiih a philanthropic in
terest in the gastronomic salvation of
coming generations.
Tim obligatory culinary instruction for
women should probably do more for tho
welfare and happiness of the nation than
the obligatory military service for men,
and no ono of the social leformors who
have raised their voices in advocacy of
radical schemes for buttering tlio condi
tion of society, lias struck fo simple and
practical it plan for bringing about indi
vidual comfort, with the rosultnnt do
mestic tninn,til!lty lind national prosper
ity. Seriously considered, the idea is a
good one, and Germany iu nut alone in
recognizing tho need of moro domestic
knowledge for girls. For years there
have been reboots o houtowifery in Ger
many and Switzerland, and from all
ptrtsof the continent, and from Eng
land as ell, girls huvo been sent to
these schools. Now a number of such
schools have been established In Eng
land, and itru wull patronized. These
schools are of different grades, and vary
m to tho expanse of tuition and board.
In some tliu pupils aro from fatniles of
wealth and position. The parents want
their daughters to bo comfortable and
happy; but they also want them fitted
for tliu lifo which is natural for women,
a id for tho duties which will fall upon
lur shoulders, whatever her station may
be. Tho uirls aro not mado to work
hard, hut they aro thoroughly trained '
in cooking, and are instructed iu tho
eloments of line laundry work, and of
gutiorul household economy and domes
tic management. When they leave tho
school they are capable of managing u
household intelligently.
Cheaor schools of housewifery inako
less provision for the comfort of pupils,
and exact harder work ; but uro well
patronized by families witlt small in
comet). Then there aro private families by
tliu score which taku three or four girls ,
and agree to initiate them into tho
secrets of marketing, conking and all i
Uilngs domestic. I
To Americans who save for tho fuiut
light throfui by sporadic cases of cook
ing schools and uhaflng-dish classes
are sitting In darkness it would teom
that the domestic future of Germany
and Switzerland is tolerably wull pro
vided for; but evidently tho educational
authorities over there do not think so.
Germany is reaching out for moro thor
ough domo&tie training, and iu Switzer
land the movement is still further ad
vanced. Tlio public- schools of Heme
or at least tho largo now buildings have
been litted up with departments adapted
for tuition in laundry, cooking, market
ing, management of stores, etc. Every
girl above a certain age is bound to at
tend the course iu this department.
The other Swiss towns are rapidly fol
lowing this example and there is great
euthutiasm oorthu success of tho ex
periment.
The daughters ot tlio oorer ehuses in
France andot the bourgcolso aro usually
famous cooks; and make a science ot
marketing; but in other departments ot
domestic economy thoir knowledge is
painfully rudimentary, and tho nverago
French housekeeping would drive a
Dutch or German or Swiss hi us wife to
lespair. Among persons of higher
social standing in Franco tho women
have departed from the traditions of
ot their ancestors. The chatelaines of
old Franco gloried iu their domestic skill
aud guarded their recipes moro jealously
than their jewels. Mine, do Sevlgno
made wafliles that were more delicious
than her letters. .Mine. Itccamior's
sauces were as famous as her beauty,
and rivalled that famous sauco Imonttd
y a French count, who swore that bo
.oiild oven serve his mother-in-law
with it so as to disguise her bitter flavor.
The Empress Josephine prepared Creole
dishes m wondorfully thut, it Napoleon
had been a gourmet, ho would never
have had the courage to divorce her.
But lli. modern French demoiselle is as
ignorant ot culinary matters as the
average American girl, and nothing
more sweeping than that eould bo said.

Itiskilid treatment that the weary
world most needs. To Artahazus, a cour
tier, Cyrus gavo a cup of gold, but to
Chrysauthus, his favorite, lie gave only
a kiss. Whereupon the courtier said:
"Sire, the cup you gave inu was nut so
good gold as tho kiss you gavo Clirvwin

famished and aching after receiving
magnificent Christmas presents, bo
cause the gler is not in his gift. Only
the heart can feed the heart. Many a
noble iieart has starved 'mid plenty bo
oati so Its famished affections were not
fed.

The worship of sous is carried so far

One ot tho most striking features of
