To tbo student of human natuio
tho free lunch counter offers a fruit
ful field for observation and cogita
tion. Tho average Now Yorker, who Una
money enough to command a fair
(share of tho comforts of life, prides
himself on being rather fastidious
about his victuals. Ho instate on
tleanlincss above all things. lie bo
conies very indignant if at a lestau
ruiit a plato is sot before him that
bears tho imprint of dirty fingers.
His knifo and fork must bear no
traco of tho servico they havo done
for tho guust who last used them.
His cup and saucer must bo immacu
late oi' there will bo troublo for some
body. And if ho should discover in
any way that tho food set beforo
him woa boincthing which had boon
previously handled and rejected by
other patrons of tho restaurant
why, ho would take a fit right off,
and when ho recovered ho would
bring suit against tho proprietor,
confident in tho assurance that any
jury which wasn't tampered with
would award him heavy damages.
But when ho confronts a free lunch
counter all his fastidiousness van
ishes. Ho sees dozens of hands paw
ing over tho contents of various
dishes which aro all supposed to bo
moro or less provocativo of ardent
thirst, without any sensations of
squeamishness becoming apparent in
his interior department. Ho calmly
helps himself to a piece of ham or a
ecrap of cheeso and proceeds to con
sumo it without being in the slightest
degree disturbed by tho reflection
that tho particular morsel ho choso
for tho gratification of his appetite
had beon touched by many fingers
some probably greatly in need of
washing beforo ho secured it.
If ho uses a fork to help himself to
beans or potato salad or a mussol or
two, it isn't a clean fork that ho em
ploys. It is a fork that ho picks out
of a jar of dirty water, into which
tho man who last used it dropped it.
That makes not tho slightest differ
ence to him, however, in a saloon,
although in a restaurant it would
justify him in "raising Cain." But
when ho goes to got his drink thero
will bo tho douco to pay if ho detects
tho decoctor mixing him a cocktail
in a glass that is not porfectly clean.
All this, tho philosopher would Bay,
tends to Bhow that tho avorago m.i"
is moro a oreaturo of habit than of
reason, and that what fastidiousnoes
ho munifeats is Bimply based on cus
tom. Now York Horald.

Tho pculptors in Greece aro cele
brated, but a "sculptor in grease" is
something of a novelty in tho art
world. Novortholess Washington
possesses st ch a phenomenal artist,
who finds 1 copo for tho exhibition of
ins genius not in classic marble or
plastic clay, but bas-relief models in
lard and busts in butterine. His
namo fa B. C. Ford, and his studio is
at the west of Center market.
Tho way Mr. Ford entered upon
his artistic career was entiroly by
cccident. It is his custom to pile fit
ly or sixty pounds of lard upon his
counter, and ono day he carelessly
t icked up a knifo and carved a bas
lelief portrait in tho sido. It was
moicly an ideal head, drawn at ran
dom, but possessed such merit as to
attract considerable attention and
custom from tho marketers. Sena
tor Mandorson, who happened along,
was particularly struck with tho por
trait, which ho declared to bo a re
markable likeness of Sir Walter Ra
leigh. Since then Mr. Ford has continued
his experiments and developed con
siderable skill in manipulating his
novel material for modeling. His
tools aro ordinary carving knives,
with which ho chitels out in rough
some ideal face. Tho features aro
nfterward molded and smoothed by
the fingers, tho warmth of which
renders tho lard plastic. When this
has been done to tho artist's satis
faction ho dips his fingers in ico wa
ter, which chills and fixes tho fcf
tures, at tho samo timo imparting a
marbloliko gloss to tho bust and
fallowing almost translucent in tho
electrio light. Washington Post.

Chocorua. which can be seen from
the poet's homo, is a tall mountain
perfectly baro on top and bereft of
all vegetation. Thero is a native
legend in connection with it, as with
, all old Indian localities, that is very
interesting.
Chocorua was tho chief of a great
tribe who dwelt on tho borders of
what Whittier calls "his broad Lake
Ossipeo." For years tho tribo and
their mighty chief woro supreme,
but ono day tho white man came.
Tho strange visitors had conquered
all tho other Indians, but Chocorua
was bound not to submit. For days
and days tho battlo raged until the
chief alone was left, and ho fled from
tho conquerors. Tho white men fol
lowed him on and on, pressing close
behind, until tho chief sped up the
rugged mountain sido and left his
enemies below.
Then bo raised his hands aloft and
prayed to tho Great Spirit to grant
his final wish, and ho cursed tho
mountain on which he stood, and or
dered nothing to grow upon tho sum
mit while the white man held tho
laud. Long and hard was his curse
upon tho mountain top, and when he
had tiuished night had como and tho
chief leaped into tho darkness and
vanished from sight forevermoro;
and, runs tho legend, from that timo
forth tho mountain was called Cho
corua, and the curso of the old In
dian was fulfilled, for today it wbaro
and bleak.
Such wa3 tho Btory told one sum

Tho decrease in tho sizo of families
is a subject which causes some alarm.
Taking tho United States as a whole,
it is found by tho census figures that
in 1830 the averago family consisted
of 5.35 porsuns. Thero ha'i been a
gradual deoreaso, it being in 1SG0
5.!3, in 187Q5.09, in 18S0 5.01 and in
1800 l.'Jt. Looking at tho different
geographical divisions, it is found
that this rulo holds tiuo except in
tho western division, where the aver
ago size of the family has ri en fi am
4.18 in 18.)0 to -1.C8 in lbW), tho in
cieuso having been steady tin ough
tho intermediate decades.
This result would havo been ex
pected, of com so, on account of the
settlement of the west in tho last
few years, tho population having in
creased rapidly and being more and
moio bi ought to tho family basis in
stead of that of single individuals or
young families Fettling in western
territories. Tho small avorago tizo
of- tho family in Oklahoma shows,
tho influenco of now sottlemonts
upon tho sizo of tho family.
In Oklahoma tho bug of tho fam
ily will increase until population bo
comes fairly denso, whon it will fol
low the rule of older communities
and decivaso. When population bo
comes moro or less urban in eluii ac
tor tho maximum is reached, and
after that a constantly receding av
orago will probably bo shown at
each succeeding census. Carroll D.
Wright in Popular Science Monthly.
