SNAILS AS FOOD.
Where the Molluscs Ara Considered a
Delicious Article of Diet.
A "Wiltshire) correspondent writes us in
somo amazement, says the London Stand
ard, that only last week ho found a man
searching for snails, not as zoological speci
mens, but as articles of food. Still more
extraordinary, ho actually Dralsed them.
Simply roasted on tho bars of tho grato and
: eaten with pepper and vinegar they nro de
i clared to bo toothsome. Soaked In salt and
water and thon cooked and served after tho
l fashion of whelks and periwinkles they aro
stui oetter. in winter tho land shells, like
Isnalls, aro hibernating in holes, under
Heaves, and in tho hollows of trees. As all
the species In a torpid stato lay on a load of
iat before, retlrinc lor tho winter, tho snail
scoter, though possibly ho did not quito
understand tho reason why, was of tho
opinion that it was only at this period of tho
rear that tho molluscs aro fit for human
consumption. Hero, most likely, ho was
wrong. But at all events, in sunninc f rcolv
on such dainty bits, tho Wiltshire gourmet
has proved himself a great deal more sensi
ble tnan many people who mav bo inclined
to call him hard names, and then proceed to
I swallow a dozen raw oysters ana a piece of
cheeso so swarming with parasites that if
tho latter wero unanimous it would walk off
tho table.
"Wiltshiro is, however, not sinmilar in
possessing a man abovo tho prejudices of
his neighbors. In several parts of England
snails nro regularly eaten not, it is true,
; as an ordinary article of diet, but at stated
foasts. For instance, tho Nowcastlo glass
men wero famous for their tasto in that di
rection. Every year they held a sort of
gastronomic festival, at which snails fig
urcdastho principal dish. "Whether tho
custom has sinco fallen into decay is a ques
tion on which, no doubt, local information is
to bo had.
But wo believe that tho iron-nuddlers in
Esomo parts of tho Black country nro wiso
t enough to still indulgo in tho samo dainty,
land it is by no means uncommon to hear of
snails boiled in milk being prescribed, liko
tho viper broth of Carolinoan times, for pa
rents far gone in consumption. It is less
agreeable to know that at ono timo they
wero employed In tho manufacture of imi
tation cream and that in spito of analysts
and acts of Parliament they are oven vet
bruised nnd stewed in milk to form ono of
tho tolerably palatable articles which pass
under that namo.
In tho neighborhood of Dixon a small
Mariner has been known to clear 81,500 nor
lannum from snails, tho vine-growers keop
ing them in dry collars or intrenches under
coverings of leaves and earth, and from
certain "escargotiores" near Ulm, in Wur
Itemborg, no fewer than 10,000,000
of tho vmoyard snails aro sent every
year to other gardens to bo fat
tened beforo they aro dispatched for
the use of tho Austrian converts during
lent. FromTroyes it has been calculated
that snails to tho value of $100,000 the
wholesale price being 4s per 100 are for
warded to the Paris markets. Packed in
casks they are also exported in a small way
to tho United States.

Successful Treatmont of Croup.
A correspondent of Good Housekeeping
gives the following account of tho success
ful treatment of a caso of creup: "Re
membering a child of our own who was at
tacked in a similar manner, wo procured a
pall, filled it with hot wajor, and, quickly
removing the little ono's shoes anasucK
jngs, placed hor feet in tho pail. Vo lost
no timo in roasting three onions, then
mashing them, spread them upon a folded
napkin, pouring over tho wholo a tablo
spoonful of gooso grease (lard or sweet oil
will do as well). Tho poultfco was applied
as hot as could bo homo to the throat nnd
upper part of tho neck. In ton mlnutos tho
quick short gasps ceased, and at the, end of
half an hour tho child, warmly wrapped in
a soft blanket, was sleeping soundly. The
skin was moist and tbo breathing natural;
nil symptoms of tho dreaded scourge had
disappeared as if by magic." ,,
