1 cup butter
1 pound Cheddar or Monterey Jack cheese, grated
1/4 cup chopped green onion
1/2 teaspoon tarragon, crumbled
1/4 cup dry white wine
Chopped walnuts
Minced parsley
Beat butter until soft and fluffy. Add cheese, onion and
tarragon and beat until blended.
Gradually beat in wine.
Divide cheese in half and form each half into a ball. Coat balls
with walnuts and parsley. Makes 2 balls, about 1 3/4 cups each.
NOTEiCheese balls may be frozen.Wrap in transparent wrap
or foil and freeze.
