teams from other counties
throughout Oregon. Washington,
and Idaho at the Pacific Interna­
tional Livestock Exposition, Sat­
urday, November 10. Members
of the livestock judging team
w ill be Michelle Sprague, Clat-

children the chance to raise a

should investigate the 4-H rabbit
and poultry projects, points out
Robert H. Stevely, Columbia
County extension agent.
Both require only a small
space. Both are relatively inex­
pensive to buy and to raise. Both
can allow the young boy or g irl to
have the opportunity to watch an
animal grow.
The 4-H rabbit project may
just fit the fam ily who lives in a
suburban situation, points out
Duane Johnson, Oregon State
University extension 4-H and
youth specialist.
In the poultry area, 4-H mem­
bers throughout the state are
showing an increasing interest in
ducks, pigeons and fancy breeds
of birds, Johnson explains, as
well as the traditional laying
hens or broiler breeds.
Animal lovers
with small
spaces might also investigate
the 4-H small animal project
which centers prim arily around
cables (guinea pigs), Johnson
adds
All of the 4-H small animal,
poultry and rabbit projects give
the young person a chance to
learn how to work with animals,
how to care for them properly
and to gain some knowledge of
the management practices ne­
cessary to raise animals suc­
cessfully, Stevely emphasizes.
The projects also lend them­
selves to successful experi­
ments, particularly in the area
of nutrition. For instance, one
Oregon 4-H p o u ltry leader
showed what happened when the
birds are denit-d a properly
balanc«*d diet. Another 4-H
poultry club experimented with
different kinds and portions of
feed rations, weighing the birds
daily to check rates of gain or
loss on the various diets.
“ The learning options a vail­
able in any of these projects are
limited only by the imagination
of both the 4-H leader and
members,” Stevely stresses.

Just how large should the
Thanksgiving turkey be’
“ That depends not only on the
number coming for dinner, but
whether they w ill be staying for
an evening snack, and whether
you want leftovers to nibble on or
freeze,” says Carol A Ashley,
Colum bia County Extension
home economist.
For turkeys under 12 pounds,
allow % to one pound per
serving When buying larger
birds, over 12 pounds, allow
to
% pounds per serving Allow
additional weight depending on
the post-holiday turkey uses you
have in mind.
Thaw the turkey slowly, ad­
vises Mrs. Ashley. If possible,
arrange for room in the re­
frigerator, and allow one to three
days for thawing Or, place the
bird in a large bag and allow to
thaw at room temperature. This
assures that the entire bird w ill
remain at a safe cold tem ­
perature during the entire thaw­
ing time. Allow about one hour
per pound for thawing.
If the bird is to be stuffed, do
so just prior to roasting it. The
dressing may be baked separa­
tely in a covered pan if you wish.
Allow about m hours for the
dressing to heat through. Always
roast the bird completely in one
continuous cooking period, even
if it means getting up early to
pop it in the oven.
A meat thermometer is the
most accurate test for doneness.
When inserted into thickest part
of the thigh muscle, it should
register 185 degrees. If your
turkey was stuffed, also insert
the thermometer into the center
of the stuffing to be sure it
registers 165 degrees.
The “ feel” test for doneness
may also be used. Turkey is
cooked when the thickest part of
the drumstick feels very soft
when pressed between protected
fingers.
Care properly for the cooked
turkey, cautions the Extension
agent. Soon after serving, re­
frigerate the meat, dressing and
gravy in separate containers.
When using leftovers, reheat
only the amount to be used Heat
leftover gravy to a fu ll rolling
boil before serving.
Turkey leftovers to be served
more than three days after
serving should be wrapped and
frozen. But never freeze a
stuffed turkey, either uncooked
or roasted.
