Soap Needed
Soap may be scarce, but it will
be even scarcer unless fat salvage
collections are maintained at their
present level. This warning comes
from C. R. Tulley, assistant state
director of the production and
marketing administration, who
asks housewives to do an even
better job of salvaging and turn­
ing in every possible ounce of
used fat-s even though meat, the
principle source, is also scarce.
Fat salvage now represents
about 1/12 of the amount of fats
...
and oils required for soap-mak­
ing, Tulley pointed out. Unless
present volume is maintained, as
much as a month’s supply of soap
is likely to" be seriously jeopard­
ized.
As to why.the soap situation is
so much worse than a year ago,
Tulley said that because of the
world wide shortage of fats and
oils, the soap industry is limited
to 78 per cent of the fats and oils
for civilian soap that it used in
the base period of 1940-1941. The
civilion population has increased
by 9 million, plus 10 million vet­
erans.
Both housewives and dealers
who have any trouble turning in
salvaged fats are asked by Tul-

Cut chicken in pieces, roll in flour
and brown well in hot shortening.
Cover with boiling water, add salt,
pepper, chopped onion, parsley and
celery leaves; cover and simmer un­
til tender, about 2 hours. Add more
hot water if necessary. Thicken
liquid and serve over chicken.

in moderate oven (350° F.) until

Cut chicken, place in large kettle
and cover with boiling water, add
1 tbsp, salt and cook covered until
tender, about 2 to 2)4 hours. Cool,
remove meat from bones. Measure
1cups of broth and combine with
1 cup milk and JX cup thinly sliced
celery. Make a paste of J-j cup milk,
5 tbsp, flour, and seasonings to
taste. Add flour mixture to broth
and cook until thickened, about 10
minutes, stirring constantly. Add
chicken, 1 cup cooked peas and 1
cup cooked carrots; and simmer un­
til thoroughly heated. Pour into
heated casserole, top with biscuit
rounds and bake in hot oven (450° F.)
15 minutes or until biscuits are
lightly browned.
