The part of it that tells how to plan sugar and equipment needs for canning fruit this year is as follows: FRUIT EQUIPMENT Supplies of glass jars, tin cans, jar rubbers, and closures are ex pected to be adequate for this year, Make the best pcssibe use of yours. Be sure that they are really well tilled with fruit. How to Stretch Sugar It also gives a new way to “stretch” sugar for canning: Add a small amout of sugar to the fruit’s own juices, instead of making the usual sugar syrup. Fruits naturally contain a great deal of water, and you can make best use of your sugar by sweet ening this fruit juice rather than by adding more water in the form of a sirup. Heat the slightly sweetened fruit carefully in a saucepan. This draws out the juices, shrinks the fruit, and drives out the air, making it pos sible to pack generous amounts o'f fruits in each jar. There should be enough juice to cover the fruit completely. Honey may be used to replace up to one-half the sugar called for in canning, and corn sirup up to one-third. Fruit juices may be bottled or put up in jars with little or no sugar. When sweet and tart juices are mixed together, no sugar is needed. Fruit for juice is proces sed at simmering rather than at Sponsored by Local 5-37» IWA IOOF Hall, Vornonia Sat., July 25, 1942 Music by Glen Davis Orchestra Tickets redeemable in War Savings Stamps at the dance or within 1 week at IWA hall Tickets $1. per person Three door prizes giv en at dance: 1st, one $25 War Savings bond 2nd, $10 in War Sav ings Stamps; 3rd, $5 in War Savings Stamps REMEMBER PEARL HARBOR Sat., July 25, 1942 PUBLIC INVITED Nowadays we all need a little extra “get- up-and-go” in order to do our regular and extra tasks of wartime well.
