Pasteurization of .milk is a scientific and accurately con trolled process by which milk is held for 30 minutes at temperatures ranging I from 142 to 145 de- g r e e s Fahrenheit, (this is not boiling) and thereafter im mediately cooled and kept in refrigeration until delivered. This process des troys dangerous dis ease bacteria, but for tunately does not des- Itroy all of the help ful organisms such as the lactic acid bacter ia present in milk. It does not change the nutritive food value, the vitamine or mineral content of milk, or its flavor.
