The State Dairy anil Food Commisson
received a very high compliment from a
beal butter dealer tlie other day, sug
gestive of the vigorous manner in which
the department is executing the law pro
hibiting the shipping in or sale of oleo-
margerine. “VZhy, those 'ellows have
got it down so fine,” said lie, “that they
are inspecting tlie axle boxes on the
freight can for traces of oleomargarine,
and I actually believe Unit if they should
find that the railroads were using it as a
lubricant they would have the officials
in court.”

commission Ims finally succeeded in ban
ishing oleomargarine from the state. It
is but rarely now that any of it is found
within tlie state, with the possible excep
tion ot some of the more remote lumber
camps. The commission’s record in tlie
matter of filled cheese is just as good.
Only in the case of cheese, it may come
into tlie state if branded as such.
The inspectors in their tours through
tlie state note a very marked scarcity of
butter. A year ago there were tremen
dous stocks O11 hand in the cold-storage
warehouse of the country, and everybody
was looking for the prevaling low prices
to rule indefinitely Tlie situation in so far
as Minnesota is concerned does not seem
to lie due to any falling off in the amount.
On tlie contrary, the number of creamer
ies has been growing larger every month,
and the aggregate output corresponding
ly greater,
“The only explanation I can see for the
improved price of butter,” said Inspect
or Williams yesterday, “is that tlie im
proved qauality makes a better market.
As the butter gels better the people eat
more of it. In the days of dairy butter
the stores and warehouses were loaded
up with all milliner of grades, from
‘extra’ down to ‘grease.’ Many people
did not know tlie difference between
good and poor’and so bought tlie cheap
er article; from motives of economy, and
then ate as little as they could get along
with. There is little or no dairy butter
in the market today. It is all creamery
product, and in most cases of very fine
flavor. People have bail to buy it, and
use it and they have been using far
more of it tlinif of the poor stuff they
formerly bought. It is this increased
consumption that, in my estimation, has
contributed most to bring about tlie pre
sent improved prices. And I believe
that the per capita consumption is going
to grow larger all the time, ss the people
get better acquainted with the merits of
the creamery product.
“The good days of dairy butter are no
more in this country. It is u rare ex
ception now to find a farmer that makes
butter. It is likely soon to be u lost
art in the family. There me in some
German communities of the state con-
se-vative families that, while sending
their milk to tlie creamery, still reserve
enough to make butter for their own use.
