and took the other hindquarter. The pack was a good mile, but
was mostly down hill, which is always good! We are not into pack-
ing in the dark unless forced to, so we called it good for the day.
The next day I went in solo and made two more packs to get the
rest of the meat and antlers out. It still feels good to get that
weight on my back and to be able to pack out what I shoot, al-
though I keep forgetting that two front shoulders weigh just a little
more than a single hindquarter!

Combine the oil, mustard powder, chili powder, cumin and car-
damom in a 5- to 6-quart pot or Dutch oven.
Place over high heat and stir until the spices sizzle, about 30
seconds. Add onions, mushrooms, tomatillos and water. Cover
and cook, stirring occasionally, until the vegetables are juicy,
about 5 to 7 minutes. Uncover and stir often until the juices evap-
orate and the vegetables are lightly browned, 10 to 15 minutes.
Add broth, tomato paste and chipotles; mix well.
Place the beans in a 5- to 6-quart slow cooker. Pour the hot
vegetable mixture over the beans and turn the setting on your
slow cooker to high. Secure the lid and cook 6 to 8 hours.
Garnish each serving with a dollop of sour cream, a sprinkling
of cilantro, and cheese. Serve with lime wedges.
