Pasteurization is simply heating milk not boil
ing it. i
By raising the temperature of the milk to 145 de
grees Fahrenheit and keeping it at that point for
30 minutes, all harmful germs are destroyed, but
the milk is not changed. . - ,.
After heating, the milk is immediately cooled to
40 degrees or less and flows on to the bottling
machine and is automatically filled and capped;
thus avoiding contact with human hands.
