The recipe for "Avocado Pota
to Boats" calls for two Califor
nia avocados and u.-cs four po
tatoes of medium size for four
servings. If large potatoes are
used, split into halves, step up
the other ingredients slightly,
and allow half a potato for each
serving. U you do this, mash
all of both "avocados with the
potato, instead of saving hall an
avocado for garnish.

should never he actually cooked,
however. To warm the half
shells, place them in a baking

2 strips crisp bacon, crum
bled Cut avocados lengthwise into
halves; remove seeds and skin.
Cut slice from top of each po
tato: scoop out potato and
mash w ith l'z avocados. With a
fork, whip lemon juice, season
ings, and mayonnaise into pota
to mixture: spoon into potato
shells. Slice remaining avocado
half. Garnish potatoes with avo
cado slices and bacon. Broil

fig. Then place the condensed
milk, vanilla and salt in a bowl.

is stiff enough to hold its shape
firmly. Work the candy with the
hands, adding more sugar if
needed. Now form into balls the
si;e of small walnuts. Itnll in
more confectioners sugar, then
insert the balls in the slits in
the figs. Add a toasted almond,
walnut or pecan. The candy
may he flavored with chocolate.
