Outdoor meals are enjoyable
, events on warm evenings. Make
them even more pleasant by com
plementing foods cooked over (he
charcoal grill uith one dish
brought piping hot from the kitch
en. Gourmet Baked Spinach is a de
lightful accompaniment to grilled
ham steaks or barbecued chick-!
en. This elegant spinach casserole
blends hard-cooked eggs with the
spinach in a creamy sauce. But-j
tered com flake crumbs and sharp
cheese combine to complete the
dish with a crisp topping.
Nice additions to this menu are
crusty parsley-buttered French
bread, sliced tomatoes and a fruit
medley for dessert watermelon
and cantaloupe balls, blueberries
and sliced peaches served with
old-fashioned sugar cookies.
Remember corn flake crumbs in
all your summer cooking. The
packaged crumbs save time and
work for you. Try them in no-bake
pie shells, as an extender in
ground beef mixtures for burgers,
meat balls or meat loves, and for
a quick topping on any favorite
casserole.
GOURMET BAKED SPINACH
2 10-ounce packages frozen
chopped spinach
2 tablespoons minced onions
3 tablespoons butter or mar
garine 3 tablespoons flour
2 cups milk
3 hard-cooked eggs, finely
chopped .
2 teaspoons salt !
4 teaspoon pepper
' teaspoon nutmeg
2 cups corn flakes or I
New Guise For Spinach
1j cup corn flake crumbs
?i cup grated Cheddar cheese
2 tablespoons butter or mar
garine, melted
Paprika
Cook spinach according to direc
tions on carton; drain thoroughly.
Cook onions in butter until
transparent. Stir in flour. Add milk
gradually, stirring constantly.
Cook until thickened, stirring oc
casionally. Fold in spinach and
eggs; season with salt, pepper
and nutmeg. Spread in greased
shallow baking dish. If using corn
flakes, crush into fine crumbs.
Combine corn flake crumbs with
cheese and butter; sprinkle over
spinach. Sprinkle uith paprika.
Bake in moderate oven (375 de
grees) about 20 minutes, or until
ightly browned.
Yield: 6 servings.
Note: Fresh spinach may be
substituted for frozen spinach,
if desired.
Sour Dough
Pancakes
1 cup milk
2 tablespoons sugar
J teaspoon salt
cup shortening
I package dry granular yeast
or
1 cake compressed yeast
' cup warm inot hot i water
'i cup all-bran
1 egg. beaten
cup sifted flour
Scald milk. Stir in suear. salt
and shortenine: cool tn lukewarm
Soften yeast in water. Stir in milk
mixture. Add all-bran, egg and
flour and beat until smootlvabout
1 minute. Cover and let rise in
warm place until doubled in bulk,
about 40 to 50 minutes. Stir down
batter. Pour
each pancake onto moderately
ikh, aiigiiuy greased griddle. Bake
slowly until bubbles appear on sur
face and edecs seem di v. Turn
only once. Stack on warm plate.
Stir down batter occasionally as it
is used. Yield: about 20 3-inch
pancakes.
