In tlie cond old sumrrwrtime
nothing beats the heat quite like
a slice of juicy, crinison-meated
watermelon. Well, summertime is
here, and watermelons, lots of
them, are coming to western mar
kets from the desert crowing
areas of Arizona and California.
Designated by the United States!
Department of Agriculture as
the Plcntiful-Food-to-Feature for
the week Ji.ly 14-20, these cool
grecn-hued melons are convenient1
picnic fare, refreshing on a hot
afternoon and a not-too-filling
dessert.
According to USDA's Agricultur
; Marketing Service, there will'
be about as many of tliem around
this summer as there were last
year, so prices should be easy on
most food budgets.
Western Watermelons
Here in the western states,
the most popular varieties are
the Klondike and the Peacock 1
and there are various types ot
these to be had, too. The
Klondike Black Seeded type is a
medium-sized melon, about 1G1
inches long and 10 inches thick,1
with a dark green rind. Its flesh
is dark pink, sweet-flavored and
free from fiber. The seeds arc
small, shiny and black.
The Peacock Improved type Is
quito similar: It, too, is medium
ized. However, its Ilesh is or
ince-rcd; the dark green rind has
faint creases, and the small seeds
are brownish-black to black.
The test of ripeness? Still the
old. time-tested one of cutting and
testing. Generally, the harvesters
do a pretty good job of selecting
the mature ones, so that con
sumers can be fairly certain of
getting a watermelon in its prime
Care And Use
If the one you buy is too large
for the refrigerator, put it in
large container, add ice and
keep covered with newspapers.
This is a good way to keep a
picnic-going melon cold, too. An
other way, if you plan to serve it
airly soon: Cut into serving sizes
wedges or slices trim off the
rind, and cover each serving with
plastic wrap or place in a
plastic bag. Stack and refriger
ate until serving time.
Hawaiian Watermelon: Com
bine melon cubes with canned or
fresh pineapple chunks. Arrange
in a lettuce cup around a mound
of cottage cheese. Garnish with
a mint sprig and serve with a
fruit salad French dressing.
Watermelon and Blueberries:
Combine watermelon cubes and
blueberries strawberries or
peaches may be used, if desired
in a large serving bowl. Sprin
kle with powdered sugar and chill
until serving time. This can be a
first-courser or a dessert.

Vs. Lamb
Here's a meat loaf with enough
distinction to serve for Sunday
dinner. It Is substantial yet deli
cate and the rosemary sauce
that goes with it is pleasing and
surprising.
LAMB LOAF
ROSEMARY SAUCE
(6 servings)
l'i pounds ground lean lamb
2 cups soft bread crumbs
2 tablespoons instant
, minced onion
2 teaspoons parsley flakes
l'i teaspoons salt
',4 teaspoon ground black
pepper
2 eggs, lightly beaten
Vi cup water or beef stock
Combine lamb, bread crumbs,
instant minced onion, parsley
lakes, salt and black pepper,
eggs and water or beef stock.
Mix well, but lightly. Turn into a
greased loaf pan 7x3x2V Inch
es. Bake in a preheated moder
ate oven (350 degrees) 1 hour or
until done. Serve with Rose
mary Sauce.
ROSEMARY SAUCE
(1 cup)
2 tablespoons butter or mar
garine 2 tablespoons flour
1 cup milk or light cream
V teaspoon salt
Vi teaspoon rosemary leaves
1-16 teaspoon ground white
pepper
Melt butter or margarine In a
saucepan. Remove from heat and
blend in flour. Stir in milk or
cream and seasonings and cook
until of medium thickness. Serve
over lamb loaf.
PICNIC
PINEAPPLE MACAROONS
For 214 dozen delicious maca
roons to tote, mix together 1 (8i
ounce) can crushed pineapple.
well drained, M cup sweetened
condensed milk, two cups shred
ded coconut and pinch of salt.
Drop by tcaspoonfuls on greased
baking sheet. Bake at 350 degrees
F. about 12 minutes.
