Salad Glamor
- The United Slates Department
of Agriculture, noting that milk
production is at its seasonal peak,
has named milk and dairy prod
ucts the P!cntifut-Foods-to-Fea-ture
for the week June 30-July 6.
One of the dairy products, pop-
ular w ith everyone because it's
good and it's glamorous, is whip
ping cream. Think what it does
to the flavor atid eye appeal of
strawberry shortcake, for exam
ple! It also adds a zesty, festive
note to salads made with the
colorful fresh fruits and vege
tables which the Agricultural
Marketing Service reports are
now on hand in abundant supply.
Simply begin with e basic dress
ing and vary it to suit the sal
ad. Like this:
BASIC WHIPPED CREAM
DRESSING
Quickly whip 'i cup heavy
cream lin a well-chilled bowl
with a well-chilled beater) until
stiff, adding 2 tablespoons lemon
juice or vinegar, l4 teaspoon salt
and a few grains pepper w hen the
cream is partially whipped. This
insures uniform flavoring and
prevents over-whipping. Makes
1 cup dressing.
California Cream Dressing
K o 1 d in 1 tablespoon each
chopped dates, figs and raisins.
Serve with fresh fruit combina
tions. Anchovy Cream Dressing
Wash, dry and finely mince 3
anchovy fillets; add with 1 tea
spoon grated lemon rind to basic
dressing alter other flavorings
have been added. Good with
salads.
Cucumber Cream Dressing
Fold in i cup pared, finely-
diced, well-drained cucumber.
Adds an elegant note to seafood
or tomato salads.
Horseradish Cream Dressing
Fold in 2 teaspoons grated bot
tled horseradish and omit lemon
juice called for in basic recipe.
Serve with ham or beef main
dish salads.
Ginger Cream Dressing
Add 1 teaspoon chopped, can
died ginger and 1 teaspoon grated
lemon rind. Serve with fresh fruit
or molded fruit salads.

lighter suppers we often want
these hot summer days, and one
adventurous recipe for those who
like to bake bread and want to
try something completely differ
ent! JELLIED MEAT LOAF
(6 servings)
1 envelope unflavorcd gela
tin 'i cup cold water
cup boiling tomato juice or
water
' cup vinegar
's teaspoon salt
2 cup cooked beef, finely
diced
'j cup celery, diced
' cup pimento, chopped
' cup green pepper, chopped
t cup onion, minced
'i cup mayonnaise
2 hard-cooked eggs, sliced
Lettuce, shredded
Soften gelatin in cold water;
dissolve in hot liquid. Stir in vin
egar and salt; chill until syrupy.
Combine remaining ingredients
except eggs. Arrange egg slices
along bottom and sides of loaf
pan. Combine gelatin and meat
mixtures; mix thoroughly. Turn
into loaf pan and chill until firm.
Serve cold on shredded lettuce.
ROAST BEEF SALAD
1 egg, hard-cooked, chilled
3 cup cold roast beef cubes
cup quick meat broth (1
beef bouillon cube d i s
solved in one cup boiling
water i
Drizle meat broth over beef,
mixing to coat cubes. Set in re
frigerator to chill. Cut hard'
cooked egg into halves. Chop egg
white and set aside.
DRESSING
1 cooked egg yolk
1 tablespoon cider veinegar
1 teaspoon dry mustard
1-3 cup salad oil
Mash the egg yolk ith a fork or
put through riccr or sieve; mix
in vinegar and mustard: grad
ually add salad oil, beating con
stantly; add
2 tablespoons chopped par
sley 1 tablespoon finely chopped
anchovy fillets
1 teaspoon capers
3 teaspoon thyme
Pour dressing over beef and
toss lightly to mix thoroughly.
Garnish with chopped egg whites.

BEEF AND VEGETABLE
SALAD
(4 servings)
2 cup cooked beef, diced
1 cup cooked vegetables t po
tatoes, carrots, peas, etc.)
diced
2 hard-cooked eggs, diced
1 onion, minced
cup sweet pickle, chopped
i cup mayonnaise
Salt and pepper
4 lettuce cups
Combine ingredients and sea
son. Serve in lettuce cups.

BEEF BREAD
(Three Loaves)
Boil:
1 cup water
a cup sugar
1 cup coarsely ground
cooked beef
1 cup raisins (may also be
ground
Soak:
2 packages yeast
t teaspoon sugar
a cup warm water
Add:
l'i cup potato water
3 tablespoons melted lard
1 tablespoon molasses
1 cup all bran
2 cup graham fluur
2 cups white flour
Mix with spoon and let rise
minutes.
Add:
2 teaspoons salt
' cup coarsely cut walnuts
2 or 3 cups w hite flour
Knead. Let rise 10 minutes and
knead slightly. Let rise till dou
ble. Punch down and let rise
20 minutes. Divide into three
loaves and let rise. Bake 40 min
utes at 350 degrees.
