Cream of Carrol Soup

3 medium-site carrots (about Vx
cupt, diced)
Meanwhile, melt in a saucepnn over low heat
2 lablespeens butter or margarine
Add am cook until transparent
2 teaspoons minced onion
Blend in a mixture of
2 tablespoons flour
Vl teaspoon Bolt , '
V teaspoon monotodium glutamate
Vl teaspoon poppor
Ifrat until mixture tuiljbles. Remove from,
heal. Cradually lir in
2 cupt milk
Cook rapidly, stirring constantly, until sauce
thickens.
When carrots are lender, fun-e llirotif-li sieve

thoroughly mised. Heat to boiling.
Immediately pour liinoh portion into pre
heated vacuum botllej cover lightly.

Cream of Celery Soup
Follow A Recipe. Substitute 2 cups (about t
stalks) finely chopped celery for carrots.
Do not sieve celery. Add i! tablespoons
finely chopped celery leaves with seasonings.
Potato Soup
Set out a 2-qt. saucepan having a tight-fitting
rover and a heavy 8-in. skillet.
Wash, pare and cut into K-in. cubes
3 medium-siio (about 1 lb.) potatoes
Tut potatoes into the saucepan with
2 cups boiling water
V4 cup chopped onion
2 or 3 leeks, rinsed and chopped
1 stalk celery, rinsed and diced
1 teaspoon salt
V4 teaspoon monosodium gtulamate
Yi teaspoon celery salt
Vt teaspoon pepper
Cover saucepan; boil at moderate rate about
15 iiiiu., or until potatoes are tender.
Meanwhile, paubroil in the skillet
4 slices bacon
Remove to absorbent paper and set aside.
When potatoes are almost tender, beat in the
same skillet
3 tablespoons bacon drippings
Illeml into the drippings
1 tablespoon flour
Heal until mixture bubbles. Remove from beat
and adil gradually, stirring constaully
1 cup milk
Return to beat and bring mixture rapidly to
boiling, stirring constantly. Gradually add this
mixture to potato mixture, stirring constantly.
Crumble bacon into potato mixture. Cover and
simmer about 5 min.
Pour lunch portion into preheated vacuum,
bottle. Cover lightly,
