NEW YORK (UPI) Three of
England's most famous cheeses

United States lor the first time.
Stilton, Cheshire, double glouces-
ter and Welsh Caerphilly will be
available in supermarket dairy
departments in pre packaged
wedges.
The Milk Marketing Board of
England and Wales offers these
buying and serving tips:
Buy only as much at one time
as you expect to use within a few
days.
Serve Cheshire and double
glouccster after meals or at snack'
time. Cheshire, believed to be the
oldest English cheese, is crumbly,
slightly salty and toasts well. Dou
ble glouccster has a mild, rich
flavor especially compatible with
lettuce or sliced cucumbers.
Stilton, blue - veined white
cheese made from cow's milk
has a mellow, rich flavor suitable
for alter meals or as a luncheon
entree with crusty french bread
hard rolls or crackers.
Caerphilly, semi-soft cow's milk
cheese with granular texture and
tangy flavor, is recommended as
sandwich or snack food, alone or
with radishes. It also toasts well
All firm cheeses should be al
lowed to reach room temperature
before serving to release the full
flavor and aroma. But keep them
tightly wrapped to avoid drying
out.

"1 can't condone speeding," the
