NEW YORK (UP1) In Chi
cago or Casublanca, this cous
cous would be party fare.
Soak one cup of dried chick
peas overnight in water to cover.
Next day. drain and set aside.
Stir 2'z cups of semclina in a
bowl with two cups of water and
one teaspoon cf salt. Rub semolina
between hands, about one foot
above bowl, allowing it to drop in
to bowl. Repeat process several
limes, being careful not to let
lumps form. Soak semolina until
the water is absorbed.
Melt one fourth pound of butter
in a large saucepan. Brown well
three chopped onions, a five pound
chicken, disjointed, and two
pounds of lamb, cubed. Add just
enough water to cover, plus chick
peas, three tomatoes, cubed, three
green peppers, sliced, four carrots,
sliced, one teaspoon of black pep
per and one fourth teaspoon or
less, to taste, of cayenne, and one
half teaspoon of salt.
Place semolina in a large strain
et or colander over the saucepan,
cover and cook l'i hours over low
heat. Add one half package of
frozen green peas, one cup of
yellow squash, cubed, one medium
sized zucchini, sliced, and one
half cup of seedless raisins to the
chicken mixture. Cook 45 minutes
mere, or until chicken is tender.
Before serving, stir one fourth
pound of butter into the semolina
with a fork. Mound semolina in
the center of a platter, arrange
the stew around it and serve to
