JELLIES
; Orange juice Jelly is easily pre
pared from the quick-frozen con
centrated orange juice and there is
nothing like home made jelly to
add a festive touch to a meal.
ORANGE JUICE JELLY
Yield: About 5 glasses of Jelly
3'i cups (1 lb. 6 oz.) sugar
1 cup Water
3 tablespoons lemon juice
(Hi lemons)
cup (6-oz. can) quick-frozen
concentrated orange juice,
thawed
Vi bottle liquid fruit pectin
Measure sugar and water into
a large saucepan and mix well.
Place over high heat, bring to a
full rolling boil, and boil hard 1
minute, stirring constantly. Re
move from heat. Stir in fruit
juices. Add liquid fruit pectin and
mix well. If necessary, skim off
foam with metal spoon. Pour
quickly into glasses. Cover jelly
at once with V inch hot paraffin.
CINNAMON
APPLE RELISH
This recipe yields about 11 me
dium glasses or 54 pounds of
relish.
4 cups prepared apples
(about 3 lbs. ripe apples)
54 cups sugar
1-3 cup vinegar
M cup finely chopped nuts
M cup (Va lb.) seedless raisins
'.2 cup red cinnamon candies
1 teaspoon lemon rind
2 tablespoons lemon juice
'i bottle liquid fruit pectin
First, prepare the apples. Core
and grind about 3 pounds fully
ripe apples. Measure 4 cups into
a very large saucepan. I
Then make the relish. Add su-;
gar, vinegar, nuts, raisins, can
dies, lemon rind, and lemon juice
to fruit in saucepan; mix well.
Place over high heat, bring to a
full rolling boil, and boil hard 1
minute, stirring constantly. Re
move from heat and at once stir in
liquid fruit pectin. Skim off foam
with metal spoon. Then stir and
skim by turns for 5 minutes to
cool slightly, to prevent floating
fruit. Ladle quickly Into glasses.
Cover relish at once with V inch
hot paraffin.

for dunks or for eating with soups or salads.

Sunshine's Parti Stix are new
this holiday season. ,
The new snack is made with
flour, shortening, rye meal, sesame
seeds, malt, leavening, salt, poppy
seeds and protein derivative. The
result is a tidbit that Is crisp, just
slightly salty, with a wonaerjui
taste.
Serve them for eating out of
hand from a bowl, or serve them
with soups, salads or as casserole
topping.
Personally, we'll stick to Nallcy's
potato chips crumbled for topping
and eat the Parti Stix as they
are.
