HOT SOUFFLE
A hot fruit souffle for dessert
adds a festive ending to a meal.
Don't be afraid of souffles there s
really no trick to them at all.
It's true they need to be eaten
at once when they come from the
oven, but when served immediate
ly from the baking dish this "Apri
cot Nectar Souffle" is light as a
feather, and deliriously flavored.
It's simple to make, too. for apri
cot whole fruit nectar is ready to
use, just as it comes from the
can. You start this just like a while
sauce, only using nectar instead of
milk, and adding sugar. Then egg
yolks are stirred in, and stifflv
beaten egg whites are folded in
last.

3 tablespoons butter or mar
garine i cup sifted all-purpose flour
' cup sugar
V teaspoon salt
1 cup apricot whole fruit nec
tar l'i teaspoons fresh lemon juice
3 eggs
Melt butter and blend in flour,
sugar and salt. Add nectar and
cook and stir until thickened. Add
lemon juice. Separate eggs; beat
whites and yolks separately. Stir
hot mixture into yolks: fold in
whites, mixing until well blended.
Pour into casserole and set in pan
of hot water. Bake one hour in
moderately slow oven (325 de
grees ). Serve at once.
Makes six to eight servings.

A small amount of ammonia
addd to warm water and used as
a rinse will help remove fish

FILBERTS
The 1938 filbert crop was lower
than the l'.57 crop, but the four
million pounds carryover from
last year was twice normal, the
largest on record. Last year's crop
wes 11 million pounds for the na
tion and even this year's crop was
larger than average.
Because of this, Safeway Stores
is conducting a major promotional
campaign on behalf of filberts as
part of its support of the fourth
?nnual National Farm-City Week.
November 21-27.

manager for Safeway, said this:
We are spotlighting our filbert
campaign to illustrate the fact that
Safeway Stores recognizes its in
terdependence with farmers every
where. While this interdependence
is particularly striking m the food
industry, Farm-City Week serves
as a reminder to all of us, both
in cities and on farms, that we
are depending upon each other in
this country for the benefits of the
citizenship we all enjoy."
Farm-Citv Week was founded by

hower in 1C55. The Presidential
proclamation said "It is desirable
that those who work on the farms
and those who work in the cities
develop greater understanding of
their mutual problems and inter
dependence in a closely knit econ
omy." Safeway Stores' advertising and
in-store displays are featuring lil
berls. Mangan said the campaign was
organized hv the National Associa
tion of Food Chains at the request
of the Northwest Nut Growers, Ore
gon Farm Bureau Federation,
American Farm Bureau Federation
and the Oregon Filbert Commis
sion. The campaign is being con
ducted under the Association's
Farmer-Retailer Marketing Pro
gram.

Furs and jewels and perfumes

mas. Kven if the lur is only a
mink collar; even if the jewels are
only dramatic costume pieces;

trip to Klamath Falls in five years last week and was call
ing on the retail grocers with Bill Riley, right, of Mail
liard & Schmeidell of Portland. The new Tabasco packages

are lined up. The famous seasoning is a Mcllhenny Com
pany product and the American Medical Association has
just announced it is not on the tabu list for diabetics and
