CORN BREAD
If you are using packaged corn
bread mix. and your family is
small, read the fine print on the
package carefully to determine
how many cups of mixture it con
tains. Most of the corn bread mix
comes in 15 or 16 ounce packages
which will serve five or six amply.
Use half the package for two or
three persons and. mark on the
package how much has been used
so you'll know the amount of liquid
to add to the next batch ef corn
bread.

Chip Cake Mix lends itself to many

TOPSY-TURVY . CAKE
1 package Swans Down Ap
ple Sauce Cake Mix
1 cup water
2 eggs, unbeaten .
1 cup canned applesauce
1 cup firmly packaged brown
sugar
vt cup butter, melted
Empty cake mix into a large
bowl. Add water and eggs. Beat
three minutes until creamy. Pour
batter into l3x9K2-inch pan, greased
on bottom only.
Combine applesauce, brown su
gar and melted butter. Spread even
ly over batter in pan. Bake in
moderate overi (330 degrees) about
50 minutes or until cake springs
back when pressed lightly with fin
ger. Allow cake to cool five min
utes in pan. Then invert on serving
tray or plate. Let stand two minute
and remove pan. (Applesauce
forms sauce on the cake.) Serve
warm or cold with sweetened
whipped cream.
APPLESAUCE RAISIN CAKE
1 package instant Swans Down
Apple Chip Cake Mix
1" cups canned applesauce
2 eggs, unbeaten
i teaspoon cinnamon
i teaspoon nutmeg
Ji cup chopped raisins
Empty cake mix into large bowl.
Add remaining ingredients. Beat
three minutes until creamy. Pour
batter into 9x9x2-inch pan which
has been lined on bottom with pa
per. Bake in moderate oven (350
degrees) about 55 minutes or until
top springs back when pressed
lightly with finger. Serve warm or
cold.
This cake may bo baked also in
two round eight-inch pans, cooking
35 to 40 minutes, or in 13x9x2-inch
pan about 45 minutes.
VARIATIONS
Prepare Swans Down Apple Chip
Cake Mix as directed on package.
While still warm, cut in serving
pieces. Serve with chilled apple
sauce and spoonfuls of whipped
cream. Or serve cake cold with
warm applesauce and a garnish
of whipped cream or . .
Cut the cake while still warm into
serving pieces. Fold applesauce,
seasoned with cinnamon and nut
meg, into sweetened whipped
cream . and serve on the warm
pieces of cake or
While still warm; cut in serving
pieces and top with ice cream and
cover with seasoned applesauce.
CREAMED BEEF
If planning to serve creamed
dried beef over toast for lunch or
dinner, add the chipped beef to a
cheese sauce rather than using
plain white sauce. It is a nice
change.
DRIED BEEF
Dried beef makes a hearty main
dish out of a baked macaroni and
cheese casserole. Remember to
cut down on the amount of salt
in the recipe if you are adding
chipped beef to the casserole.
SUBSTITUTION
Use a half teaspoon of grated
lemon rind and one teaspoon of
lemon juice to flavor a four-egg
sponge cake instead of the ubi?
quitous teaspoon of vanilla.
Never follow the crowds whea
selecting a fragrance. A perfume
that flatters a close friend may
do little for you. If you are the
out-of-doors type, avoid a femma
fatale fragrance. It puts you out
of character.
