California large dry limas arc
an economical source of good pro
tein. Keep this point in mind when
planning meatless menus. The
cooked limas combine well with
cheese to make highly nutritious
entrees.
TOMATOES
When brofling tomato slices or
fixing stewed tomatoes, always
add a little sugar to bring out the
good flavor of the tomatoes.
STEAK ALPINE
Mix Vi ijup flour, 14 teaspoon
salt, V teaspoon black pepper;
pound into Hi pounds round steak
with meat hammer or edge of
saucer. Brown both sides of steak
in hot shortening. Add 1 can (114
cups) V-8 juice: cover and cook
over low heat about 1V4 hours or
until tender. Stir occasionally.
Makes six servings. Mashed po
tatoes are a natural with this entree.

readership for this page.
About a month ago, your food
editor was asked for a recipe
for Peach Tapioca Pudding which
the person inquiring remembered
from 'way back. She commented
that the recipe had appeared at
one time on the tapioca package.
A letter to General Foods Cor
poration, makers of Minute Tapio
ca, brought a quick response.
Marie Wooden, product publicist
for Minute Tapioca, says she
thinks this is what was requested.
PEACH TAPIOCA
(UsliiK Fresh Peaches)
1 cups sliced fresh peaches
2 tablespoons butter
V teaspoon nutmeg
1 tablespoon lemon juice
' Vi cup granulated sugar
2 tablespoons brown sugar
1-3 cup quick-cooking tapioca
14 teaspoon salt
2'. cups water
! teaspoon grated lemon rind
Place peaches in a bowl. Dot
with butter. Sprinkle with lemon
juice and nutmeg. Set aside. Com
bine sugars, quick-cooking tapio
ca, salt, water, and lemon rind in
saucepan. Place over medium
heat; cook and stir until mixture
comes to a boil. Pour over peach
es and mix thoroughly. Cover
and set in warm place; stir once
after 15 to 20 minutes. Serve
warm with cream. Makes 8 scrv-
angs. - .
