than the oval slices you cut from
an 8-ounce red-wax-coated round
of Gouda cheese. You may expect
to have a yield of six patties from
a recipe using a one-pound can of
salmon. Brown the patties slowly
on both sides in a heavy skillet.
Then, place one oval slice of
cheese on each pattie and keep
them in the covered skillet over
low heat until the cheese melts
slightly, or run them under the
broiler to sllghtly melt the cheese.
