ESCALLOPED POTATOES
WITH HAM SLICES
4 medium potatoes
Dash of pepper and salt
l'a tablespoons flour
?i pound pre-cooked sliced
ham
2 cups milk
2 tablespoons butter
Scrub potatoes, pare and slice
thin. Place layer of potatoes in
buttered baking dish; sprinkle with
salt, pepper and flour; add layer
of ham slices. Repeat until all in
gredients are used. Add milk; dot
top with butter. Bake In a mod
erate oven (350 degrees) for l'j
hours or until potatoes are tender.
Makes 4 to 8 servings.

pany owes its birth to a careless
swtsb of a horse's tail.
The tail belonged to a horse
owned by Otis F. Hall, a Spokane
banker who was blessed with far
more than the average man's
share of business acumen and
faith in the American economic
system. The horse in question
swished his tail across his mas
ter's face and thereby set off a
chain of developments that began
with an ulcer of the eye and ended
with the creation of a new busi
ness. The horse's tail had been drawn
across Hall's right eye, cutting the
surface of the cornea, and it
wasn't long until the injury had
developed into an ulcer. This was
in 1890, and because he was un
able to obtain in Spokane the spe
cialized care that he needed, Hall
finally went to Chicago where he
placed himself under the care of
two brothers who had achieved a
prominence in the field of ophthal
mology Dr. James B. McPatrich
and Dr. George W. McFatrlch.
Hall also took with him to Chi'
cago his young son Frank, who
had been foubled with an eye lr
ritatlon.
The trip proved beneficial to the
Halls, both from short-term and
long-run standpoints. Under the
care of the McFatrich brothers,
both father and son were com
pletely cured of their eye disturb
ances within a relatively brief pe
riod of time.
During bis treatments in Chi
cago, Hall learned of a special eye
preparation which the McFatriches
compounded and regularly pre-
them betore. Nor had the idea oc
curred to them Independently. De
spite all of Hall's considerable per
suasive powers they reiusd to do
anything along the lines he was
suggesting.
For most men. this would have
been the end of the idea, and the
end of the story. But not Otis, Hall.
He returned to Spokane, but his
thoughts and his plans remained
with the McFatrlch brothers and
their remarkable eye preparation.
In a steady barrage of letters to
the doctors. Hall hammered away
on the thesis that by marketing
their preparation, they would be
performing a greater service to far
more people than they could hope
to benefit through their practice
alone. After a few years. Hall
moved from Spokane to Chicago.

It took him another seven years,
but eventually Hall's patience and
persistence were rewardd. In 1897,
