COW BELLE OF THE WEEK is Mrs. Paul Hess, who with her
husband and small daughter, Mary Ellen, owns and operates
a small farm on Keno Highway. They have Herefords. Mrs.
Hess, Helen to all her many friends, holds down a fulltime
bookkeeping position in Klamath Falls in addition to all her
other dutie.
BEEF ON THE MENU
Mary Ellen Hess, daughter . of
Mr. and Mrs. Paul' Hess, owns
two Hereford cows of her own
which she hopes .to enter In 4-H
this year. It won't be so long until
she will be a second generation
Cow Belle. "
' Mrs. Hess Is a member of the
Farm Bureau and is active in farm
and cattle activities. Here is her
lecipe for beef cookery.
RUSSIAN STEAK
V,2 Inch thick steak, seasoned
and browned
1 medium onion, chopped
1 green pepper, chopped
Vi cup finely chopped celery
- 1 large can chopped mush
rooms 2 bay leaves
Pinch of Rosemary leaves
After the steak is well browned,
remove from the pan. Put chopped
vegetables into the pan and saute
in the drippings. Add mushrooms,
bay leaves and rosemary and put
mixture over the steak and sim
mer for two hours in the oven or
on top of the stove adding suffi
cient liquid to keep meat from
burning on the bottom.

TOMATO ASPIC
An easy way to make tomato
aspic Is to heat to boiling 1 cup
of tomato-vegetable Juice. Add to
1 package lemon-flavored gelatin
and stir until gelatin Is dissolved.
Add the remaining cup of tomato
vegetable Juice. Pour Into an 8-inch
pan and chill until set. To serve,
cut gelatin into squares.

POTATO OMELET DELUXE
I'A cups packaged mashed po
tatoes 1 cup boiling water
teaspoon salt
3 egg whites .
3 egg yolks
1-3 cup milk
'A teaspoon Worcestershire
sauce
y4 teaspoon pepper
Add "packaged mashed potatoes
to boiling water. Remove from
heat. Do not. cook. Quickly press
potatoes into water with table fork
to moisten evenly. Add salt and
whip with fork for about a minute.
Beat egg whites until stiff. Beat
egg yolks slightly. Add egg yolks,
milk, Worcestershire sauce, and
pepper to potatoes and mix. well.
Fold Into egg" whites. Pour into
hot buttered 10-inch skillet. Bake
in moderate oven (375 decrrees) 15
minutes, or until puffed and lightly
browned. Then place under broiler
about 2 minutes, or until golden
brown. Cut across at right angles
to handle of plan, being careful
not to cut all the way through.
Fold carefully from handle to op
posite side and serve on hot plat
ter. If desired, serve with creamed
chicken or tuna, or with a Creole
or cheese sauce. Makes 4 to 6
servings.
