, being packaged by Klamath Potato Processors, Inc., of Tule
lake in container boxes for retail sale. This big display of
10-pound packs of K-P spuds occupies a prominent center
location in the produce department of Low Cost Supermarket
in the Town and Country Shopping Center. Bill Pfeiffer has

has set up an organization which
is expected to go a long ways
toward reestablishing the deserved
reputation of potatoes grown in
this area. '
The firm started last year pack
aging peeled potatoes and peeled
cut potatoes for Frencn frying.
This year a new package has
been added to the line. U.S. No. 1
potatoes, sorted so that potatoes
run from a minimum of six ounces
up to 16 ounces, are washed or
brushed and packaged in 10-pound
and 50-pound cartons tor retail
consumption.
Bulk potatoes, U.S. No. l's. are
selling for about the same price,
so the homemaker pays a very
Blight premium, if any, for the
extra fancy potatoes.
The plant at Tulelake is set up
to sort, wash or brush end pack
age about 4.000 cartons of the
. 10-pound pack a day and 2.S00 car
tons of the 50-pound pack. Two
carloads of these packs have al
ready been shipped to Sacramen
to stores, and the packaged extra
fancy potatoes are availaole. at
' several Klamath Falls stores.

Combine IVi cups cocoa, 1 cup
sugar, ij. teaspoon salt, ,i teaspoon
ground allspice and 'a teaspoon
ground cinnamon. Add l'i cups
boiling water and . blend. Place
over low heat and bring to a boil.
Boil five minutes, ' stirring con
stantly. - Remove from fire and
cool. Add .'i cup honey and 2 tea
spoons vainlla,- Store in a covered
Jar in a cool place until ready to
use.. To.Seiye,: heat"V4 cuplioney
cocoa syrup with 2 vcups scalded
milk over boiling water. Before
serving beat with a rotary beat
er. One,-fourth cup of the syrup
will make three servings. Keep
a jar. of the syrup made up for
after school or evening refresh
ments. - . .

STORE EXPANDS
Face-lifting and revamping has
been going on for the last couple
of weeks at Ron Phair's Big Y
Market, 2110 South Sixth Street.
Harry J, Rigsby, who conducts
his own merchandising service in
San Francisco and has had more
than 20 years merchandising ex
perience, was brought to the store
to make Improvements in Inven
tory control and methods of mer
chandising in all departments of
the Big Y.
"We had too wide a variety of
lines in the variety department,"
Phair commented. "We have dis
continued some broken lines and
concentrated on bringing our cus
tomers a greater assortment of
nationally advertised lines."
An extensive line of kitchen and
bath curtains in new synthetic ma
terials has been added. A full line
of Sunbeam electrical appliances
is available, as' well as other pop
ular lines of housewares.
Ron Phair suggests watching his
advertising for the big One-Cent
Dish sale which will herald the
announcement of the enlarged va
riety department.

potatoes to serve with pork chops
or hamburger steaks, the follow-
