She is a charter member of Klam ath County Cow Belles and at tends all of Uie meetings from her home three and a half miles north east of Merrill. . v Here's her recipe: BEEF POT ROAST 'r . Roll a four to five-pound beef chuck in 'seasoned flour. Brown In hot fat. Add a little water, cover kettle and cook slowly three to three and one-half hours. During the last hour add 8 to 10 small onions C- to 10 medium carrots , 8 to 10 stalks of celery 8 to 10 peeled potatoes V, teaspoon salt Remove meat and vegetable to aTiot platter when done. This hand' some chop is made by cutting a thick slice of boneless loin almost In two, and then opening it out to make a round shaped boneless chop. The- biftterfly chop should also . be cooked slowly In moist neat.'. ; . . This recipe featuring pork shoul der chops is a good one and an interesting one, too. Feature pork often, taking . advantage . of the many different fresh pork cuts that will make family meals fun. SMOTHEBED PORK CHOPS 4 small or 2 large shoulder chops cut 'i inch thick teaspoon salt 1 can ; 12 cups Mexican style corn . ; i 1 Medium sized onion, thinly sliced . Cut large pork chops into two pieces. Brown well on both sides. Sprinkle with salt. Cover with corn and liquid in can. Add oinion. Cov er and cook over low heat about 45 minutes or until meat is tender. Serves 4. SPOT CLEANING , .
