CRANBERRY CHRISTMAS BREAD is a "special" Christmas
bread sweet, but not too sweet, so that it can be served
for breakfast or with afternoon tea. It's made with a rich
All-Bran yeast dough and uses the fresh, ruby red, tart cran
berries that are in good supply now. Recipe and photo from

'', CHRISTMAS BREAD
1 cup cranberries ;
6 tablespoons sugnr
1 cake compressed yeast
2 tablespoons lukewarm wa
ter Vi cup All-Bran
'i cup scalded miik
3 tablespoons shortening
4 cup sugar
'i teaspoon salt
S"2 cups sifted flour
1 egg, well beaten
Cook cranberries and sugar to
gether over low heat, stirring care
fully until sugar Is dissolved and

(Soften yeast in lukewarm water.
Combine All-Bran and milk; let
stand until most of the moisture
is taken up. Add shortening, su
gar and salt and stir until short
ening is melted. Cool to lukewarm.
Stir in enough flour to make a
thick batter. Add yeast and beat
en egg. Beat well. Add remainder
of flour to make a soft dough.
Turn onto a lightly floured board
end knead. Place In a greased
bowl, cover and let stand in a
warm place until double in bulk.
When light, punch down and roll
into rectangle about 12 x 9 inches.
Spread cranberry mixture over
half of Tectangle. Fold other half
over cranberries and press edges
together. Place in greased 12 x 3
inch pan and let rise until double
in bulk. Bake in moderate oven,
350 degrees, 25 to 30 minutes
Yield loaf. .
DIFFERENT TOUCH
