River. America loves Its cookies,
loo. blie grew up. she reports, In
the heart of Uie cooky country. To
day, as director ol the Plllsbury
Mills test kitchen 111 Minneapolis,
she perlecls cooky recipes not
only lor her two young sons whose
falnrr was killed in the war, but
tor home bakers throughout the
country.

FRENCH TTILES
Three-quarters cup 5 to egg
whites, unbeaten: 1 2-3 cup sugar,
4 teaspoon salt, a cup melted
butter, cooled to lukewarm: ' cup
melted shortening.' cooled to luke
warm: 1 cup sifted enriched Hour,
cup blanched almonds, fuicly
chopped.
Combine egg whites, sugar and
salt: stir until sugar Is dissolved
and mixture is thick. Add butter
and shortening: mix thoroughly.
Blend In flour and almonds and
beat until smooth. Drop by level
tablespoonfuls onto ungreased bak
ing sheet.
Place S Inches apart to allow
ample room tor spreading. Bake
in moderate oven iMO degrees F. )
8 to 10 minutes. Let stand 'a
minute: then, quickly and gently.

MISSOURI WALTZ BROWNIES
Three-iuarters cud sifted en
riched flour, 'i teaspoon double
acting baking powder. teasDOon
salt, 'i cup shortening, 1 cup sugar.-
3 eggs, 3'i squares 2 ox.)
chocolate, melted and cooled; 1
teaspoon vanilla 3 cup chopped
nuts. - .
Sift floor, salt and baking pow
der together. Cream shortening:
add sugar gradually, creaming
well. Add eggs, chocolate and va
nilla. Blend In dry Ingredients and
outs. Mix well. Pour Into well
greased and floured B x 9 x 2
inch pan. Bake In moderate oven
(350. degrees F.l. 55 to 35 min
utes. Cool and frost. Cut Into bars
or squares. Makes about 11 dozen
brownies. ..

saucepan. Cook over direct heat
until a little syrup dropped in
cold water forma a soft ball vm

Add 1-tablespoon butler and cool

voting and 1 drop green lood
coloring and bent until thick unci
creamy. Frost cooled brownies.

teaspoon each: cloves, nutmeg,
salt. teaspoon cinnamon, i4 lea.
spoon black pepper. 2 teaspoons

1 cutis firmly packed brown sugar.
Sift together Hour, soda, clows,
nutmeg, salt, cinnamon and pop
per. Add anise seed. Combine eggs
and brown sugar; add to div In
gredients and mix w,-ll 11
dough may be chilled. Shnpe dough

greased baking sheets. Cover nook-

room temperature overnight. Bake
