county agent's office for poi

bushels, about 20.9 million over
average. A more reasonable
yield of about 150 bushels per
acre would 'produce only 338.1
million bushels, but still 0.7
million over average. It may

How fresh produce can
add zest to winter meals
You can count on these different ways of
fixing produce to give your wintertime meals
new appeal.
TWIN VEGETABLE OVEN, CASSEROLE '
Thit is a delicious and colorful vegetable com
bination to include along with an oven meal.
Fill one side of a well-greased shallow cas
serole with shredded carroU, the other side
' with shredded beets. Add a small amount of
hot water. Sprinkle with salt and pepper; dot
with butter or margarine; cover tight. Bake
in a moderate oven t350F.) for 30 minutes,
or until tender.'
PARSNIP StAW
You'll find this has the most delightfully different,
flavor. You won't believe how good k is until
you try it.
Chill and then peel or scrape 4 or 5 'medium
sized parsnips. Shred on medium shredder.
Sprinkle with a teaspoon of salt and tea
spoon celery salt and then toss lightly until
mixed with i cup sour-cream or salad dress
ing. Serve at once. Serves 6.
FRIED APPLES
Try these with sausage cakes for dinner or for
breakfast some morning with fried scrapple.
Wash, core and slice in Vi inch thick rings 4
large cooking apples. Saute in butter or mar
garine in a heavy frying pan until slightly
brown. Mix together 1 j cup sugar, 1 teaspoon
nutmeg, i teaspoon cinnamon, H teaspoon
salt and sprinkle one half of the mixture over
the apples. Cook for three or four minute
and turn. Sprinkle with remaining sugar mix
ture. Continue cooking over low heat until
. apples are almost transparent. Serve hot.
Serves 6.
MARASCHINO WALDORF SALAD
Here's a colorful salad that's festive enough for
a party.
Combine 2 cups diced, anpeeled, red apples,
cup sliced maraschino cherries and 1 cup
grapefruit sections. Toss lightly with mayon
naise or salad dressing. Serve in lettuce cups
garnished with whole cherries. Serves 6.
APPLE SAUSAGE AND ONION
CASSEROLE
When the budget's a liKtc pinched, try this
simple but tasty dish. Potatoes baked right
along -in. the oven will practically complete the
meal.
Shape a pound of pork sausage into 6 or 8
patties. Fry in a heavy frying pan until
browned, turning once. Peel and slice into
rounds 4 medium-size cooking apples and 2
large onions. Alternate layers of sausage,
apples and onions in a 2-quart casserole,
sprinkling apples with salt. Cover and bake
in a moderately hot oven 400F.) about 40
minutes, or until apples are tender. Serves
6 to 8.
