the canning season
The moment berriet start coming into
market, it'e the signal for canning to
get under way. It'e good nutrition,
too, for by canning berriea, you're
tucking away vitamins and minerals
for future health.
CANNING BERRIES The hot pock,
method Wash berries and remove
stems or hulls. For each quart of
berries, add M to 1 cup of sugar: boil
3 to 4 minutes, stirring gently. Pouf(
while still scalding hot into hot, ster
ilized quart jars to yA inch from top.'
Seal and process in 'Boiling Water
Bath for 5 minutes.
'CANNING BERRIES -Cold Pack
Method Pack washed, hulled, tin
cooked berries into hot, sterilized jars.'
cover with boiling, light to medium
syrup (Yiio X cup sugar heated to
boiling .with 2 cups water) to within
inch of top of jar, adjust jar lids
and process in 'Boiling Water Bath
for 20 minutes.
To Process In Boiling Water Berth
Use a deep container with tight-fittinf
cover and a rack or false bottom of
wire or wooden slats to keep jars off
the bottom of the container. Fill with
water deep enough to cover jars by
to 2 inches. Heat water to almost
boiling, then lower hot, filled jars into
hot water, placing so they do not
touch each other. Cover container,1
heat to boiling, and keep boiling vig
orously for the entire processing time.1
Count processing time from tho
- moment the water begins to boil. If
water evaporates, add more boiling
water to keep j ars covered at all timee.
CANNING JUICE FOR FUTURE JllUIS
Wash, hull and crush berries and heat
without water 5 to 10 minutes. Ez
tract juice from pulp by straining and
pressing through double thickness of
wet cheesecloth. Pour into hot, star
ilized jars to H inch from top. Pro -cess
(see above) for 20 minutes.
FOR JELLY MAKING-By canning tho
' juice in this manner, it is a simple
thing to make jellies whenever there's
enough sugar saved up. You'll find
many other uses for this fruit juioa
too, if you've been foresighted and
canned enough. It is delightful to add
to punch or fruit drinks. Just sdd
sugar to taste and add water if it is
to go a long way.
HOW MUCH? It takes about i to
1 Vi pounds of berries to give 1 quart
of canned berries, and a little more
for a quart of fruit juice.
