14 PER CENT
Sale of independent retailers
In Oregon, based upon reports
from firmi in most kinds of
business, were 14 per cent high
er in February 1941 than in
February 1940, and 3 per cent
lower than in January 1941, ac
cording to an announcement re
leased by Vergil D. Reed, acting
director, bureau of the census.
Sales for the first two months
of 1941 were 16 per cent higher
than for the corresponding pe
riod of last year. . -
Of the several kinds of busi'
nest covered by this current sur
vey, food stores showed a gain
of 5 per cent February 1941
compared with February 1940;
apparel stores a gain of 17 per
cent; motor vehicle dealers a
gain of 33 per cent; furniture
tores a gain of 14 per cent, and
the lumber building - hardware
group sales showed a gain of 33
per cent. Department store sales
rose 9 per cent
Stores in Portland reported an
average gain of 13 per cent from
February 1940; Salem stores a
gain of 12 per cent; stores in Eu
gene gain of 23 per cent, and
stores in Med ford a gain of IS
per cent Stores located In areas
of less than 2S00 population re
ported an average gain of 8 per
cent
The statements shown here are
based upon confidential reports
received from 756 cooperating
retailers located throughout the
state. This group of firms re
ported net sales of $5,416,230
for the month of February 1941,
and during the calendar year
1939 accounted for $65,525,000
of the total independent retail
sales in Oregon. Sales figures
were used as reported, without
adjustment for seasonal or price
fluctuations. February 1941 con
sisted of 28 days, as against 29
days in 1940.

Yankee bean soup is a first
class meatless "nutrient" meal
in itself. Several readers ask
for a recipe. Here it is, to
gether with two brand new fish
main dishes for Lenten meals:
YANKEE BEAN SOUP
One-half lb. dry pea or navy
beans, 1 quart water, I lb. salt
pork, 1 onion, 1 teaspoon pep
per.
Soak the beans over night.
Drain, add water, sliced salt
pork, onion and pepper. Cook
about 1 hour or until beans are
mushy. Rub all but the salt pork
through a coarse sieve. Season
to taste. Serve hot with a slice
of the pork for each serving.
TUNA AND SALMON VEGE
TABLE CASSESOLE
(Serves 6 to 8)
One cup uncooked elbow mac
aroni, 4 tablespoons butter, 4
tablespoons flour, 2 cups milk,
1 teaspoon salt, 1 teaspoon Wor-
cestershire sauce, i cup flaked
tuna, 1 cup flaked salmon, 2
cups sliced cooked carrots, 1 cup
cooked lima beans, 1 cup grated
cheese.
Cook elbow macaroni in boil
ing salted water for about 10
minutes or until soft and no
starchy taste remains. Drain and
wash with cold water. Melt
butter in soucepan; blend in
flour. Add milk gradually, stir
ring constantly. Add seasonings
and allow to cook for about three
minutes or until no starchy taste
remains. - Add macaroni, sal
mon, carrots and lima beans.
Turn into a well-greased two
quart casserole. Sprinkle the
top with the cheese; cover with
the utility glass cover and bake
in a moderate over (350 degrees
F.) about 30 minutes or until
top is brown.
BAKED FILLET OF
FLOUNDER
(Serves 6)
Two-pound fillet of flounder,
cup minced onion, 2 table
spoons gmgersnap crumbs, 2
tablespoons minced parsley, 2
teaspoons Worcestershire sauce.
1 teaspoon salt, 23 cup water.

Wipe fillets with a damp cloth;
place in an oval two-quart heat-
resistant glass casserole. Cover
with a mixture of onions, crumbs
and parsley. Add seasonings
and pour water over all. Cover
and bake in a moderate over
(351 degrees F.) about 25 to 30
minutes if fish is fresh; bake
about 40 to 45 minutes if fish is
quick frozen and not thawed.
Garnish with lemon slices and
tufts of watercress.

soup, hard rolls, rhubarb tart
lets, tea. milk.
DINNER Tomato Juice,
tuna, salmon and vegetable

prune scuffle, coffee, milk.

less formidable than the task of
registering all men between 21
and 35 inclusive which was car
ried out in a single day last Oc
tober. The numbers involved arc
much smaller, the registration
machinery has been tested, and
its operation is generally
familiar.
