Southern Bakod Potatoes
Scrub uniform-sized, baking
potatoes, rinse thorouKlily, dry.

bring the oven temperature up
to 450 degrees F. and bnke until
the potatoes are tender when
pinched. This will re(uirc ubout
one hour for the large potatoes.

much more quickly by starting
In a hot oven (450 degrees). This
will require uhnut 45 minutes,
possibly less. Place a piece of
sliced bacon on top of the potato
after it has been baked and tho
top cut off. Then broil it until
tho bacon is crisp and brown
and the juices have soaked
through the potato.
TOMORROW S MENU
BREAKFAST: Apple sauce,
cracked wheat cereal, raisin
toast, coffee, milk.
LUNCHEON: Creamed cod
fish on toast, hard rolls, grape
fruit and orango cup, cup
cakes, ten, milk. . .
DINNER: Southern bakod
potatoes, buttered carrots with
minced pnrsley, mixed greens
salad, baked chocolated bread
pudding, hard sauce, coffee,
milk.

CHICKEN GIBLET OMELET
(Serves 4 to 8)
Four to 6 eggs, 4 to 0 table
spoons water, 1 teaspoon salt,
pepper, 1 tablespoon butter,
chicken giblets, 1 cup chicken
slock, 2 tablespoons flour.
Soparate yolks from whites.
To yolks add salt, pepper and
water, beat until thick. Ilcat
whites until stiff, cut and fold
Into yolks until well mixed.
Heat omelet pun and put In buU
ter. Pour in mixture, cook slow
ly, occasionally turning pan to
brown evenly. When delicately
browned underneath placo pan
In moderoto oven (1125 degrees
K.) to finish cooking top The
omelet Is cooked when It Is firm
to the touch. Fold ond fill with
chicken glblct sauce, made by
thickening 1 cup chicken slock
with 2 tablespoons flour and
uddlng tho chopped cooked gib
lets. Turn onto hot pluttcr.

CORN SOUFFLE WITH
SAUSAGES
(Serves 4 to 0)
Ono pound pork sausages, 2
cups canned corn, i cup milk, 2
eggs (separated), 1 tablespoon
flour, i teaspoon black pepper,
i teaspoon salt.
Fry the sausages until brown,
Drain off the fat and place in
bottom of baking dish. Beat the
egg yolks, add the corn and
milk. Sift dry ingredients and
blend smoothly with the liquid
mixture. Heat the egg whites un
til stiff and fold Into tho corn
mixture. Pour over the sausages
and bake 30 minutes in a slow
oven (300 degrees F.).
MONDAY'S MENU
BREAKFAST: Sliced ba
nanas in orange Juice, oat
meal, bran muffins, marma
lade, coffee, milk.
LUNCHEON: Chicken gib
let omelet, toast, green salad,
chocolate brownies, tea, milk,

spinach, apricot tapioca, cof
fee, milk.
