Spaghetti Hnure
(Serves I to ell
One-fourth pound loan henf,
ground, 2 Inrgn runs tomatoes, 1
handful dried mushrooms, 2 small
onions, parsley, sprig of basil, I
clove garlic, dash of nutmeg, olive
oil.
Chop together gnrllr, parsley,
basil and onion, and fry. In ollvo
oil until they begin to turn brown.
Add tomatoes, salt, pepper and
spice and let simmer for about
2i hours. In a separate pan,
brown the meal In a Utile butter
and add to above mixture. After
soaking the mushrooms In luko
warm water, chop them fine and
conk In olive oil for S minutes.
Thrn add to sauce. Continue to
cook for mint her hour. Serve on
spaghetti with several plecea of
butter and gratod Parmeaan
cheese.
To cook your spaghetti for i
these saunea, use 1 gallon of sail
ed water, boiling rapidly, for
each pound of spaghetti. Ho not
dump the spaghetti Into the water
all at once, but a little at a tlmo.
so that the water will not cease
boiling. Cook about 15 minutes,
and drain at once.
Meatless Knure for Spaghetti
(Servea 4 to 6)
Ono-fourth pound fresh mush
rooms, 21 ounces butter, 2 ounces
pine kernels, t salted anchovies,
R large red tomatoes, onion, 1
teanpoon flour.
I'ul half the butter In a pan
and brown the pine kernels in It.
Remove from pan aa dry aa pos
sible and mash them. Mix with
flour. Chop onion fine and brown j
In the same butter. Remove on
ion, then add tomatoes cut in
pieces (romovlng seedal. Cook
tomatoes, adding salt and pepper,
and when done, strain.
Tut the strained tomatoea back
on fire, adding mushrooms cut
