Pickles and Relishes: Seasonable ": Bits Easy to Preserve Pickles and relishes aro not class ed as strictly hygienic food, but there have been so many requests to publish recipes of this class, and as the home-mado product aro un doubtedly pure, there really sooms no reason why these foods should not be used In moderation. To mako pickles quite harmless as well as palatable, caro must bo taken to have tho vinegar abso lutely pure. Either malt or white wine vinegar may bo used. Brine In which articles for pickles are to be stored should be strong enough to hold up an egg. A pint, or two cups of salt to one gallon of wa ter will usually be found the right proportion. - As vegeables for pickling only remain over night in a brine, one cup of salt to one gallon of water is sufficient. Articles to be pickled lose some of their crispness if scalded, but they will absorb the vinegar more easily. Pickles Keep Beat In Stoneware Jars .1 agate spoon or ladle, as the vinegar attacks metal, causing dangerous compounds. I A spiced vinegar, la excellent for any kind of pickles. It may bo pre pared by boiling ono quart of vine gar with ono ounce each of cloves, auspice, ginger, mace, bar leaves and chopped rod pepper. Cool be fore using. Vinegar should always bo Just boiled up, either with or without spices, thea allowed to cool before using. Raw vinegar nover gives the same mellow flavor as that obtained when the vinegar Is scaled. Sugar has a tendency to harden fruits and vegetable, and too heavy a syrup may toughen and spoil fruit made Into sweet pickles. Some varlotles of peaches and all melons should be cooked until ten der in water before the pickling syrup is added to tbem. Pears Baals of Good Sweet Pickle Cut six or eight .medium-sired poors In halves, remove coro and proas ono or two cloves into each Pickles stored in stoneware Jars 'half pear. Cover with cold water, adding one quarts of water and boll gently un til very tender, then drain well and pack in sterilized Jars. Bell vinegar enough to cover the fruit, adding two tablespoons of sugar for each quart of vinegar and two table spoons of wbolo mixed splcea tied In a muslin bag., Lot the spices and vinegar boll for ten minutes, then pour orcr tho fruit In tho Jars until overflowing. Seal tightly and -storo In a cool place. Sour CBcamber Pfc-tai Select small cucumbers, wash, sprlnklo with salt and covor with cold -water. Use one cup of salt for each gallon of water. Allow to stand over night or about twolve to four teen hours, thon rlnso and pack In fruit Jars or crocks. Add green or red peppers, also whole splcos. Cover with scalding vinegar. If using fruit Jars, sterlllzo and seal carefully. If stored In an carthenwaro crock, placo a plate with a weight on top to keep tho pickles In tho vinegar, then cover tho Jar. Theso pickles should keep almost Indefinitely. Sivcct Cucumber Pickle Preparo as for sour pickles, except add sugar to tosto to tho hot vinegar. Ginger root, horseradish, and must ard seeds may be added to tho hot vinegar. Dill Picklea Fill a Jar with smalt cucumbers, placing a small ploce of dill be tween them. For each quart Jar add one tablespoon of salt. Pour cold wat er over the pickles, place a pleco of dill on top and soal tlghtty as for canned fruit. Placo In a warm place or In the sun until the liquid bo comes cloudy. Then It will become clear again, and by that time the pickles aro ready for uso. Mustard Pickles One quart small cucumbers; 1 quart small onions; 1 green tomato; 6 large green peppers; 1 head cauli flower; 3 stalks celery. Cut in suitable pieces and soak In weak salt water twenty-four hours. Then cook in same water until tender and drain. Dressing Six level tablespoons ground must ard; 1 cups sugar; 1 cup of flour; 2 quarts vinegar. quarts of canned tomatbea may ro placo tho raw ones. If liked highly seasoned, llttlo red chill peppor may be added. Ono quart of canned or freshly cooked stralnod tomatoos; 1 table spoon salt; 1 grated onion; 2 tablo spoons sugar; W teaspoon popper; Vi toaspoon cinnamon; V4 toaspoon cloves; H teaspoon nutmeg; 2-3 cup vinegar. Comblno and cook slowly until thick. Put through a sieve, reheat and bottlo. If liked, a clovo of garlic may bo added to tho catsup. PlcalUU Ono quart of green tomatoes; 1 pint of red tomatoes; H small cab bage; 3 onions; ono green pePPtr; 1 small red pepper; 3 cucumbers; t- cup salt; -1 cups vinegar; 4 cups brown sugar; 1 teaspoon mustard; 1 teaspoon pepper; 1 teaspoon celery seed; 1 teaspoon mustard seed. Chop tho vegolablos, cover with salt and allow to stand over night. Drain and press In a cloth to rcmoro all liquid; add vinegar, sugar and spiers and let simmer until cloar, This will tnko about ono hour. Storo In hot sterilized Jars.
