up! It Is a favorite dish for young

Emergency Food (iarden Commission
of Washington, D. C, which in co-operation
with this newspaper will give
$5,000 In cash prises for the best

dens. The right proportion ot apples and
sweet or sterilized elder must be kept
In mind. Take Ave gallons of elder
and boil It down one half, skimming
occasionally during boiling. Wash,
pare, quarter and core the apples,
and use In proportion of two parts
apple to one part boiled elder. Bell
slowly for four to six hours, stirring
often to prevent burning. When the
butter Is two-thirds done, add about
a pound of brown sugar to the gal
lon, and spice to taste. If the apples
nro a little over-ripe, add lemon or
vinegar to give acid taste. Apple
butter should bo stored In sterilised
receptacles, and tho tops sealed or,
Labor Shortage for
Harvest Is Serious
SALEM, Augr 23. The shortage
of labor for harvesting the crops of
Oregon Is from 20 to 30 per cent of
the demand, according to a mld-soa-son
survey Just completed by O. P.
Hoff, state labor commissioner. The
estimate does not Include the demand
for help In harvesting the fruit crop.

wooden boxes caused by strikes In the
Ptiget Sound mills, negotiations have
boen opened for the supplying ot
several carloads of heavy cardboard
containers for the apple crop soon to
be harvested, according to Frederick
W. Buff, manager ot the exchange.
Catalontan deputies In the event of
their demands being refused by the
Madrid government, but the present
outbreak does not appear to be sup
norted by the Catalontan leaders, It
being confined to discontented work.

NAVIGATION SCHOOLS
OPEN THIS WEEK

two government schools of naviga
tion opened this week, one at Port
land and the other at Astoria.
The schools are to operate under
direction of the federal shipping
board, and a complete course In nav
igation Is to be taught free to Amer
icas youths and men above the age
ot 19 years.
