to light among some unpublished colon
ial papers in the possession of Mrs.
Arvilla McDonougb. The receipt is ss
follows:
"The pears should be very fresh.
Wssh and put them Into boiling lye for
uiiriuic ; remove ana put tnent in cold
water. Next put the fruit into a pra
ps red syrup of sugar and water. Use. a
balf pound of sugar for every pound of
fruit: water to dissolve. Now cook
for a quarter of an boor. Remove and
put on plates to cool. Boil syrup down
to one-bslf Its original quantity: put
syrup snd pears into jars and add
