Under such conditions It becomes aoft and plastic, regaining its newness, and this despite the fact that some moisture must be driven iff in the operation. He thinks this is explainable on the suppokitloii that In new bread there la free water present, but that in stale bread, while it is still there, it Is in a state of true chemical combination. In general, he concludes, It is a sound physiological plan to thoroughly masti cate every morsel of fond before swat.
