Creameries All Over the Universe are
Big Paying lntlutrie.
Rcort from all crvmneries in Orciton
a i) J California are very (tut lerinn. They
rw all paring enterprises from ihestsrl.
They are consider! in most localities
the mot important industries establish
ed. In H the beautiful antl rieh valley
of Lake county there has never yel lawn
move made to establish a ciesntery
here whore llie country i so well adapt
ed to ruth an entcrprie. IViulilinK
Thomases should read al-ut the sucies
4 the Ashland Creamery. The hui
ness of that creamery, established tlieie
in 18tti. proves conclusively the value of
creameries to a community, to the farm
ers ami to the operator id the creamery.
The tidily supply of milk bmtwhl to the
Ashland creamery if &VW pounds, while
it in never in excess of 5000 pound.
The amoiiiit of hutler turnetl out run
from 120 pounds to 300 pound a tlay.
The perecenta!e of butter fat in the
milk averages 4.3. Twenty-one cents a
pound is paid for butter fat, anil this i
the price now ruling in fan Francisco.
A ! k ' price is obtained for the huttcr
product, the avenge laving 22, cent a
pound. The hutter U chipped as f.ir
outh a Redding ami noith to Koe
buty, hut most of the output is consum
ed locally. The total output is equal t
only a fraction of the ilenuiinl for this
butler. An inspection of the creamery V
book shows that a pan! cow yields f-i-worth
of milk yearly to its owner, and.
that an exceptionally tine milch cow will
earn S5 a year. Then there is the calf,
which alone makes a profit lor the ranch
er on the investment. One rancher milk
ing on an average of'seventeen cows dur
ing the past nine months, has drawn a
little over f 100 a month for milk, some I
times as much as $1 15. Instances of a
band of cows earning f t'J to $o0 each
yearly are not uncommon. About 40n
cows are milked for this creamery, the
greater number of them beinjf Jersey
and Durham 8 or short horns.

It has been derided by the pioneer
monument committee of the Society
of Oregon Native Sons, with the con
currence of the Oregon Native Daugh
ters, to hold in Portland next year a
gTand celebration to ast a week or
ten days. While the plana are not
fu'.ly matured, the consensus of opin
ion among business men, as expressed
by many of them, is that it will be
more satisfactory to have it take
tbe place of the annual exposition;
that we should make it a state af
fair an ex.iibition of the wonderful
Improvements in manufacturing ap

th-ee?core years of our governmental
ex.aicnce and offer every encourage
ment to the people to brircr in the his

I!es:des the attractiveness of such
feature it will give ur historical
society an opportunity to augment its
already valuable eol'retion. The Na

historical societies, their corrinon ob

the epriy days of the lard of "inter

purpose of this celebrati' n to raise
money to build a monument to the

Am attempts are being1 made to
found a domestic science and to intro
duce exactitude into tbe operations of
the kitchen, a note in the Monthly
Weather Keview recording1 the actual
experience of a housekeeper at Albu
querque, X. M., is of interest. It ap
pears that cooking- recipes and prac
tices which are trustworthy not far
from sea level are worthless at Al
buquerque, the altitude of which is
4.9.13 feet. Water bulla there at 202
degTeea Fahrenheit, instead of 212 de
grees Fahrenheit; hence articles of
food the cooking of which depends
upon heat applied through the medi
um of water require a longer time for
cooking than is given in the cookery
books. On. account of the extreme
dryness of the atmosphere, farina
ceous food, such as beans, corn, etc.,
lose so much of their moisture that
they have to be left for a long time
in water before cooking in order to be
oftened; but the worst difficulty is
with cakemaJdcg. Ordinary recipes
a to number of egga and amount of
baking powder break down altogeth
er, and housekeepers bare to modify
them if they wish their operation
to be successful. As the barometric
pressure determines to what extent
the disengaged carbon dioxide shall
expand and aerate the dough, this
may explain the different action of
baking soda and egg batter. In any
case, the 'observation is interesting,
and chemists may find it worthy of
their attention.
