J,.smti Ol'lhelil, femur medical officer of I.ad.y Margaret F'ruitarian Hospital at Bromley, Kent. England. It in growing i" favor as food, just as the supply is increasing mid the price falling, while the mpply of other food i-rod'ji'tB is dimini.shing and the price rising. This is to the great advantage tu Oregon, for not only can the people of this 'state secure an ahundant home supply of apples, pearv peaches and othtr fiuits for their own consumption, hut they can produce an unlimited sup ply of all kinds fur lands which are Iris favored. Dr. OliHieid finds the food value of fruit attested hy the diet of an infinite nuinher of races under the most varied conditions in an infinite nuniher of countries and climates, Both history m.d science contradict the popular idea that fruit has only to do with pleasure and nothing to do with nutriment; "that dessert is only an after-dinner dalliance, where, in effect, the best and hardest work can he done on a fruit meal," Dr. Oldlield describes the food value of fruit in these words: "There are siveral ways in which fruit is import ant as fund. First, hy itself, it is itself a food, and, if rightly selected, a complete and full nutriment -for every condition of the body in every .MniMie and under every condition of work, and of constitution and of health nf rli.restion can be obtained from a fruit dietary. Second, fruit 18 of essential value in assisting other foods In lie (lii'eslei 1. 'I bin!. Iruit is of the utmost value iif helping the body to eliminate wa-te mutters, which pro ,lii, ilehiltv ami old age. Fourth, fruit is almost the only food possible in some forms of disease, and is largely mir:itivp 118 We II as nutritive. "In the first place, when rightly e, l,.,'ied. it forms a complete nourish mi. nt. for the bodv in a must asssimil- ablo form. The elements necessary for bodily sustenance have been classi fied liv ' manv authorities in various ui!.vs hut the one which is most gen orally accepted divides food into the following classes of matter: (1) The H,,ne(iiip: (2) the saccharine; (3) the oleaginous; (0 the albuminous; (5) thi inline. "Many beginners in chemistry take ,r,wiviliirries. for examnle. and find they contain only .117 per cent of albuminous matter, and therefore they argue that if a man were a fruitarian hcTwould have to eat three pounds of gooseberries per day to get the neces sary amount of nitrogen for his daily sustenance. It would be just as wise to argue that if a man eats meat he would have to get 20 pounds of beef per day to get the necessary amount of carbohydrates. "Water is an essential of life, and water should be of the purest charac ter. There is no water more pure than that which hai been distilled twm dew, and trebly distilled from the clouds of heaven and stored within the dainty myriad tanks of an apple or a pear. There is no fear of hard or chalky water or typhoid germs. Fresh fruit juice gives pure water at its best. Watermelon contains anout 95 per cant water; blackberries and currants, 82 to K7 per cent; grimes and cherries (which people wrongly think are the most watery, from 7H to M) per cent. "In fruits the saccharine matter is in the form of uruno sugar or glucose, into which starch is converted by the saliva and pancreatic and intestinal juices, llio most, important poini about tins class oi nutrient elements is that they do not puss into the excretion or put liny Strain on tne excrewiy organs, but are oxidized and passed into carbonic iicul unit water as ineir ultimate products, and are therefor great heat factors, and not exhausting elements of excretion.-Oregonian. MAXWELLS WIN GL1DDEN TOUR Three Maxwell ears, composing the Tarrytown, N. Y., team, won the Glid den tour, which ended in Jacksonville, Fla., recently, defeating seven other teams of three cars each in the most strenuous (Hidden toirr which has ever been conducted. Driving like mad over a mere trail, through the Florida pine forests and under a speed schedule which was supposed impossible, the Tarrytown trio made a whirlwind finish and arrived early enough to retain the only perfect score in the contest. Only seven of 14 teams arrived over the awful roads which make the so called National highway, the 11 elirri nated having penalties ranging from 1000 to ;i(W0 points. In the division competition for the trophy offered by the city of Anderson, S. C, for the best Individual score, regardless of price or class, there were several with tied scores, among whom were Miss Birdie Marks, of Athens, Ga., who drove her Hilver plated Columbia road ster the entire 1454 miles, and the Maxwell cur entered by Hoke Smith, Governor of Georgia and United States Senator elect, both these had absolute perfect scores. At a meeting of tired competitors a drawing was held and the Governor won the beautiful Ander son trophy. This car was driven by Arthur Z.e, ol larrytown, im. x., and the Governor rode in the car almost the entiie distance, inviting the Gov ernors of other states to be his guests. The Glidden tour is the National re liability contest. The 64 cars which formed 18 teams included the highest priced autombiles manufactured in this country, the average being more than 105011. . On this account the victory of the Maxwell team is the more signifi cant, because this team is composed of cars selling for $li2H0. Ihey bucked the water breakers of Pennsylvania pikes, showed great speed running through the Shenandoah valley, climbed the rugged trails through the blue Ridge Mountains, wallowed through the oozy red clay of the Carolines and Guorgia und Anally triumphed in a dash through Florida's bottomless sands in the pine forests between Liva Oak and Jacksonville. Following is the order of the finish: Maxwell, first; Stevens, second; Cadil lac, third ; Ford, fourth ; Cadillac, fifth ; Marathon, sixth; Flanders, seventh. Notice to Apple Tree Planters.
