If one owns a potato sllcer, which Is
not an expensive utensil, Saratoga chips
are enslly prepared. They are always
an acceptable accompaniment to fried
flsh, but perhaps are never more hap
pily in evidence than when served as
ono of the accessories of a picnic
luncheon. Wash and pare medium
sized potatoes. Slice thin, using a veg
etable Hllcer made for the purpose, In
to a bowl of cold water and let stand
ono and one-half hours, changing the
wuter twice.
Drain, plunge Into a kettle of boiling
water and let boll ono minute. Drain
again, cover with cold water and let
stand five minutes. Tuke from the wa
ter and dry between towels. Fry In
deep fat until delicately browned, keep
ing In motion witli a skimmer through
out the cooking, itemove with a skim
mer to a pan lined with brown paper
(which will absorb the superfluous fat)
and sprinkle with salt. Always drain
fried potatoes on brown paper, for
fried food if properly cooked and prop
erly drained seldom absorbs enough
fut to be Indigestible to odulfs.
