Ham Tetrazzini Variation
Of Famed Italian Recipe
Ham Tetrazzini is a variation
of the well-known Italian dish,
Chicken Tetrazzini, said to have
been created as a compliment
to the celebrated opera singer,
Mmc. Louis Tetrazzini.
The casserole is a delectable
blend of spaghetti topped with
a creamy sauce filled with
cubes of ham and fresh mush
room slices, the whole mixture
given the special flavor fillip
of sherry and Parmesan cheese.
What do you serve with this
main dish? Broccoli or Italian
green beans, perhaps, and a big
salad of tossed greens with a
thin vinegar and oil dressing
crusty bread and butler, milk
and fresh fruit for dessert.
MAM TETRAZZINI
One-fourlh cup finely chopped
onion; one-half cup butler,
melted, (one stick); one-half
pound fresh mushrooms, sliced,
(two cups); one-third cup flour;
two cups milk; (wo cups half
and half (milk and cream);
three tablespoons cooking
sherry, optional; one-fourlh lea
spoon salt: dash garlic salt;
dash pepper; three-fourth cup
shredded Parmesan cheese
(two and one-half ounces); one
seven-ounce package spaghetti,
cooked; two cups small thinly
sliced cooked ham pieces (10
to 12 ounces).
Saute onion in butter until
transparent; add mushrooms
and cook until tender. Blend in
flour. Stir in milk and half and
half; continue stirring until
mixture is smooth and thick
ened. Add sherry, salts and
pepper. Mix together one-half
cup shredded Parmesan cheese
and spaghetti in boltom of two
quart shallow baking dish.
Cover with alternate layers
of sauce and ham ending with
sauce. Sprinkle remaining Par
mesan cheese over lop. Bake
in moderate oven, ;I75 degrees,
until bubbly around edges of
dish and brown on top about 21)

The couple left December 26 for
Myrtle Point where they make
their home and where both are
teachers.

Three recent articles we read only strengthened our opinion

One man mentioned his newsboy, who was openly resentful

he was expected lo present checks. Most of them he had never
seen, and in some instances he felt their service the past year
deserved no recognition. These apartment house lists, we are told,
usually include the puliccman in the area.
Potpourri gives, and receives, a few gifts which probably
come under the "service" category, but all are exchanged among
persons we know and in most instances consider as friends. We
hope it is never otherwise. Perhaps in the future gifts of this
sort we'll present at Thanksgiving or the Fourth of July at
some time which has no religious significance.
Among our Christmas letters was one from Beth Ryan, Oswego,
an Oregon Press Woman member and sorority sister, which in
cluded an "out of the mouth of babes" remark. One of Mrs.
Ryan's grandchildren, two and a half years old, was taken for
a pony sleigh ride with Santa Claus after which he observed to
his mother with excitement "There's a man in that suit!"
