MEDFORD, OREGON Feeding the Family By ZOLA VINCENT rood Edtto With Gala Turk.y Bullet Ring In Naw Yaar We know of nothing more spectacular, easier to do, more easily served nor more sat isfying than a gala turkey buf fet for offering hospitality to greeters of the new year. Choose a big torn turkey If half the people you know in the area are coming; or a smaller turkeys; bring out ily or neighborly affair. May be you'd like to consider two smaller turkeys; bringt out the second oe when and if needed. Everyone in our part of the country know how to roast turkey because we do it the year round. This year for the very first time, we have come up with a fine new notion for offering stuffing, Many good cooks today rely on one of the several ready to-use stuffings which grow constantly in popularity. These seem to have caught the flavor inherent in home toasting of bread, measuring and "seasoning". Like home made stuffing, they lend them selves ideally to tempations to vary with oysters, sausages, nuts, minced vegetables, dried fruit or whatever. Many vari ations are printed right on the packages which usually come with two bags in the package for convenience. New Year's Buffet Our New Year's buffet of fers freshly carved turkey, parslied dressing halls (recipe below) instead of the usual in side job, buttered green beans with mushrooms and jellied cranberry sauce with a twist of pineapple slice on top. Turkey cream gravy stays warm in the chafing dish for those who wish to help them selves. And for the savory goodies for crunching, w oven - salted nuts (recipe be low). Parslied Dressing Balls Two popular packaged dressings readily available include an all - purpose ready-to-use dressing that is met ba - toasted and an old south ern corn bread stuffin' that also is melba - toasted. Here we use the all-purpose type for the making of crisp baked stuffing balls instead of stuff ing the turkey. They're so easy to serve; add Interest to the "presentation." For each eight servings: 1 6Vi-ounce bag melba- toasted all-purpose dress ing U cup melted butter or margarine 1 small onion finely minced 'a cup finely chopped nut meats (almonds, walnuts, pecans) cup water, broth or milk Vi cup melted butter or margarine 1 cup finely chopped parsley Combine mclba-toasted all purpose dressing with one fourth cup melted butter or margarine. Add onion, nut meals and liquid; blend well, but lightly. Shape into eight balls and brush with melted butter or margarine; roll In parsley. Place in greased cas serole and bake at 325 de grees 35 to 4S minutes. Oven-Salted Nuts 2 cups assorted nuts 1 tablespoon butter Seasoned salt Rinse nutmpatff with mA water; spread in shallow pan; am wun butter and sprinkle with seasoned salt. Bake at 350 degrees. 2(1 minutes dir. ring frequently until golden nrown. In a Dig dowi, combine dairy egg nog which is readily avail able from milkman nr nt in. cal super market, with IVi cups orange juice, one cup water, one-half cup bottled lemOn iuice. OH Inhlocnnnn sugare; shake vigorously. Sparkling Punch. For 24 nervines desicned tn everyone. Combine one cup iresn lemon juice, one cup fresh orange juice, l'j cups sugar and one cup very strong tea; slir well to dis solve suger. Pour into large punch bowl (or Into pitchers); add Ice cubes and just be fore serving, add two quarts sparkling water. Float orange and lemon slices in bowl. in awn Wjrtjji' STARTING NEW YEAR A festive turkey-and-fixings buffet is the simplest, most satisfying way of starling the new year with good neighbors, friends and family sharing good tid ings, here is something really new; Turkey dressing baked separately in individual balls. It is served with oven-salted nuts and other festive accompaniment. Punch (or Crowd. Many think this an ideal refresh ment; makes 20 servings. All you need is one quart of fruit ice or sherbet, two quarts gingerale. Put one-half of the fruit ice or sherbet in a punch bowl and pour in two quarts gingerale. Top with remaining fresh fruit ice or sherbet, scooped or ta blespooned. Decorate with sprige of mint and thin orange or lemon slices. Instant Coffee Instant coffice is a boon to party givers. The instant or soluble coffees attain perfec tion when you simply follow directions on the jar. A four ounce jar of soluble coffee makes 32 cups of coffee when combined with six quarts briskly boiling water. Stir cof fee well and let stand briefly to insure brew of average strength. Serve steaming hot. Treasure Trove of Dips From Soup Mixes Ever since Arthur Godfrey (so It is said) discovered the affinity of onion soup mix with dairy sour cream as a divine dip for crackers, po tato chips and corn chips, others have been, in the ver nacular, doing likewise. Here are a few; each based in dairy sour cream. All recipes are party size. Clam Dip. Blend one enve lope tomato soup mix, one pint dairy sour cream and two tablespoons Italian salad dressing thoroughly. Stir one lOH-ounce can minced clams, drained, and one tablespoon clam juice into the tomato sour cream mixture. Refriger ate. Guacamole Dip. Combine one avocado, mashed (yields approximately one cup), one pint dairy sour cream and three tablespoons onion soup mix. Fold in one tomato, chop ped, and one lablesoon sherry. Refrigerate until serving time. California Dip. Heal one third cup sherry and combine with one envelope onion soup mix; refrigerate for at least one hour. Stir well with fork and fold in one pint dairy sour cream and one-fourth teaspoon paprika. Very good Southern Oregon's Climate Compared To Truffle Area Southern Oregon's climale and latitude are similar to southern France where truffle growing is an Important in dustry. This relationship as tn cli mate and produce was pointed out recently by Maj. M. J. Hopkins, Rogue Valley Man or. He added that truffles might grow on Oregon while oaks, being the fruiting body of a fungus which grows on the roots of oak trees and some other plants. Truffles are used as flavor ing on salads, in candies, and in sauces, and are highly prized by connoisseurs. Alba, Italy, Medford's sister city, is known for its truffles. In discussing growing truffles here, Major Hopkins talked with officials of the bureau of land management. Robert D. Hostetter, resource management specialist, said that since a high lime content in the soil is necessary for growing truffles, the locations suitable would be limited in this locality. Work With Service Hostetter noted with per sons In the Rogue valley who would be interested might work in cooperation with the U. S. Agricultural Research service at Beltsville, Mri., and with the Food and Agriculture organization of the United Na tions at Rome, Italy, to pro cure some European oak seedlings innnculated with the truffle fungus for culture in southern Oregon. Major Hopkins, who is a re tired geologist with the Corps of Engineers, U.S. Army, was a field geologist for Societe drs Mines riu Couscrans from 1905 to 1IMJB in the truffle region in southern France. He is a 1904 graduate of the Royal University of Liege, Belgium, in mining and geology. The horticultural crop re search branch of the Agricul tural Research service report ed that the European truffles do not occur in the United Stales, but there are a num ber of species of underground fungi related to the European truffles found in the Pacific coast areas. Since truffles grow at least one foot underground they are generally difficult to find. Children Killed in Fall Down Cliff Ogden, Utah -(1JPD- Three children plunged 500 feet to their deaths Wednesday night when they aliped on icy rocks while trying to climb down off a mountain near their homes. The boy and the two girls fell down a sheer cliff in the Waterfall Canyon area about two miles from the base of the mountains east of here. Sheriff's office identified them as Mark Way, 9, son of Dr. and Mrs. Grant Way; Shauna Southwick, 9, daugh ter of Dr. and Mrs. Paul Southwick, and Bonnie Ross, MEDICAL AID Durham, N.C. -1IPII- Duke University reported Wednes day that motion picture film has been used to record the circulation of blood inside the eyeball. Cut out top of one two pound Edam cheese and scoop out most of the chese, leaving a one-eighth to one-fourth inch shell. Place 2 and one-half cups dairy sour cream in blender; add cheese and one envelope tomato soup mix. Blend at high speed until the ingredients are well mixed. Fold in one-half cup chopped parsley and one-fourth cup brandy; refrigerate until serv ing time. Fill Edam shell with cheese, tomato and parsley mixture.
