Behind The Iron Curtain
Vienna -IUPD- Christmas be
hind the Iron Curtain would
hardly be recognized as such
by a Westerner, but it does
exist.
Until very recent years, it
was dangerous for a Christian
to celebrate Christmas in east
ern Europe but since de-Stal-inization,
it is regaining its
former character as the oldest
and most honored Christian
holiday.
In Hungary, under the rule
of Premier Janos Kadar,
Christians who want to cele
brate in the traditional way
are no longer prevented from
so doing.
Christmas
Dances Set
Two Christmas dances have
been announced by square
dance clubs of the area.
Star Promendars Square
Dance club will hold the an
nual Christmas party and
dance Saturday, December
22, at the Roxy Ann Grange
hall, Medford. The committee
states that this will be a
special dance with extra en
tertainment and a gift ex
change. Women are to bring
gifts for other women, and
men for men, with the price
not to exceed 50 cents.
Round dancing will be
from 7:45 until 8:30 p.m. and
potluck refreshments will be
served.
The Promenaders announce
that lessons will be started
again by the club on Sunday
January 6. The class will be
held from 2 to 5 p.m. at Roxy
Ann Grange hall, Medford.
Adults and teenagers from
the age of 13 up are wel
come, it Is stated. Byron Dib
ble will be instructor, and
further information may be

Greeting cards, both re
ligious and secular, now are
sold in the state-run shops.
While Christmas trees and
decorations practically disap
peared under the regime of
Matyas Rakosi, they have re
appeared in Hungary in the
last few years.
The traditional two - day
holiday, cut to one under Ra
kosi, has been restored as well
as has the Catholic tradition
of eating carp on Christmas
Eve.
In other East European
countries, a similar transfor
mation has been taking place.
"Stalinist" authorities tried
for years to turn Christmas
into just another festive oc
casion, without success. The
word "Christmas" was re
placed by "Festival of the
Pine Tree," and "Father
Christmas" became "Father
Winter."
Now, behind the Iron Cur
tain, there are enough Christ
mas trees and gifts in the
stores, although often at pro
hibitive prices for workers.
As in other Christian coun
tries, Christmas is a family
festival with a gaily decorated
tree, lighted with candles, and
under it colorful packages.
After the presents are
opened, the family sings tra
ditional carols, and then has
the Christmas Eve dinner of
fish and trimmings.
Even in the Communist
countries, the churches are
busy if not actually full for
the Christmas Eve services.
The congregations are made
up of all age groups, from
grandmothers to teen-agers.

Kolachky, orginated In
American homes, but it to good it deiervet special recogni
tion, especially at holiday times. The individually filled
bum can be baked with a variety of fillings, cottage cheese
and raisins, or preserved fruits or jams. They are hearty and
healthful. Particularly are they useful when you need to
serve large quantities or are entertaining children or young
persons in groups. Recipes are given here for the original
form with yeast dough, and the
prepared biscuit mix.
Kolachky Holiday Treat
For Friends or Families
Though cooks are always
experimenting with new va
rieties of homemade breads,
some of the old world treats
still remain among the best.
Kolachky, for one, is no new
comer but it is so good it
deserves special recognition.
The delicious Kolachky, indi
vidual filled buns, originated
in Bohemia, but they are fa
miliar favorite in many
American homes today.
You should have no diffi
culty making Kolachky. After
letting the dough rise to prop
er proportions, form it into
balls and make a depression
in each. You can bake Ko
lachky with any of a wide
variety of fillings, but one
that we heartily recommend
is a delicious combination of
cottage cheese and raisins.
Kolachky is welcome any
time of the day or evening.
It tastes best of all, however,
when you and a few neigh
bors take an hour or so away
from household chores and
relax with coffee talk. The
coffee hour and Kolachky are
old friends -a heaping basket
of the warm breads, an invit
ing potful of the steaming
coffee.
They are hearty and health
ful. Particularly are they
good when you need to serve
large quantifies or are enter
taining children.
KOLACHKY
One-half cup luke warm
milk; one-half cup sugar; one
teaspoon salt; two envelopes
active dry yeast; one-half cup
warm water (105-115 degrees);
two eggs, unbeaten; one-half
cup soft shortening; four and
one-half to five cups enriched
flour (measure according to
directions on package).
Combine milk, sugar and
salt. Sprinkle yeast on warm
water. Let stand five minutes.
Stir well and add to milk
mixture. Stir in eggs and
shortening.
Add enough flour to make
a soft dough, first with spoon
and then with hand. Knead
until smooth and elastic.
Cover. Let rise in warm place
until double in bulk. Punch
down. Let rise again until al
most double (30-45 minutes).
Shape into 2-inch balls. Cover.
Let riso again until light (15
to 30 minutes).
Make a depression in cen
ter of each and fill with
Cottage Cheese Filling. Place
on greased baking sheet. Bake
In hot oven, 400 degrees, 20
to 25 minutes. Makes about
two and one half dozen.
Cottage Cheese Filling
One and one half cups cot
tage cheese; two egg yolks;
one-half teaspoon mace; one
tablespoon grated lemon peel;
one tablespoon lemon Juice;
one tablespoon sugar; one
half cup seedless raisins.
Combine all ingredients;
mix well.

with prepared biscuit mix,
and either version can be
varied by placing fruit jams
or preserves in the center de
pressions. For Quick Cereal Kolachky
use two and two-thirds cups
prepared biscuit mix; two
tablespoons sugar; one-fourth
cup melted and cooled butter,
margarine or fat; one cup
milk; three cups whole wheat
flakes or corn flakes; one
half cup thick orange marma
lade, plum jam, or raspberry
preserves.
Combine biscuit mix, sugar,
and butter or margarine in
mixing bowl. Add milk, all at
once, and stir just until dry
ingredients are moistened. Al
low to stand two or three min
utes. Spread cereal flakes
out onto a large flat pan.
Drop rounded tablcspoonfuls
of dough onto flakes, one at
a time. Sprinkle flake3 over
top. Transfer to greased ba
king sheet with a small pan
cake turner.
Press a cavity In center of
dough and fill with thick
marmalade, preserves, or jam.
Repeat until all dough is
used. Bake until done and
lightly browned in a moder
ate oven (375 degrees F), 12
to 15 minutes. Serve warm,
plain or with butler. Yield;
12 rolls.

members and guests of the
Soroptimist club when they
met for their annual Christ
mas party in the Mark An
tony hotel December 14.
During the luncheon a chor
us of fourth graders from Lin
coln school presented a pro
gram of Christmas carols di
rected by Mrs. Charlsia Schall
and accompanied by Mrs. Vir
ginia Cecil.
At its conclusion the presi
dent, Mrs. Mabel Winston, and
the second vice president,
Mrs. Alta Nichols, conducted
an initiation ceremony for
two candidates, Mrs. Vera
Poole and Mrs. Isabel Thomas.
There was the customary ex
change of gifts and contribu
tions were collected for the
Soroptimist table at the
YMCA benefit sale in the arm
ory. Each member also gave !
$1 to buy Christmas trees and
trimmings for several families
who might otherwise have
none.
Soroptimist club luncheon
meetings will be resumed af
ter the holidays with the first
regular business session of
1963 on January 4.
