Who First Had Nrve to Eat
An Oyester? Hungry Fellow
Neither history nor tradi
tion gives us the faintest idea
as to who that venturesome
person was who ate the first
oyster and found it good. He
really deserves more recogni
tion than was ever credited
to him. Perhaps he was very
hungry at the time, or ex
tremely reckless, for it surely
took courage and a high de
gree of "intestinal fortitude."
The oyster is one of the
few bivalves, or two-shelled
animals, which remains fixed
or locked in one place all its
adult life.
It may even cement itself
to other oysters and help to
form a clump. If this hap
pens, and it often does, the
first ones to attach themselves
will later be in a bad way, as
the others which pile on top
may smother the "under
dogs." Noisy Oyster
We decided once to spend
the night anchored over an
oyster bar. Sleep was impos
sible; the oysters comprising
the colony made so much
noise we couldn't sleep. The

thousands of bivalves open
while drinking in sea water
while driking in sea water
sounded like a group of play
ful boys entertaining them
selves by pouring buckets of
BB shot down a bare stair
way. We found, along in the night
sometime, we could stop the
noise by yanking on the an
chor rope. The vibrating an
chor alerted all the oysters
and they "clammed up" for
a half hour. But after a pe
riod of quietness they all be
gan plinking away again and
awakened us again.
The early American Indi
ans knew about the eating
qualities of oysters. They had
a decided advantage over us,
for at that time the oysters
had a chance to grow; some of
them were 18 inches in
length. It would take only
one to make a meal. Neither
did the Indian hesitate be
cause the month didn't hap
pen to have an 'R' . . . Some
thing we presently go by in
eating this delicious bivalve.
Good Anytime
Actually the oyster is just
as good to eat in June as in
September. But maybe it's
just as well that the old su
perstition is still in opera
tion, as the summer months
are the spawning time, and
our reluctance to eat an oy
ster in any month that does
not have an 'R' in its name
gives the bivalves ample time
to lay the eggs necessary for
future oysters.
Many other gourmets have
found these succulent "shell
fish" very good to eat. But
they have natural enemies

such as the ocean starfish, the

er marine creatures. In pails
of the gulf coast, raccoons
raid oyster beds from whi-.'h
the name "coon - oysters"
arises, meaning those which
attach themselves in locations
where the raccoon can reach
them.
Of all the oyster's enemies,
with the exception of water
pollution, the greatest enemy
is the starfish. Of course the
starfish is no more a fish than
an oyster is a "shellfish."
But that's the way it some
times goes.
