Here is a quickly made pea
nut butter bread that gives
variety to packed lunches, to
tea party sandwiches, late-at-night
party sandwiches as well
as offering real mealtime eat
ing pleasure. Good just with
butter or when spread with
cream cheese andor marma
lade. i cup shortening
a.i cup peanut butter
1,4 cup sugar
2 eggs
2 cups sifted flour
3 teaspoons baking powder
s.4 teaspoon salt
1 cup milk
Cream shortening and pea
nut butter together. Add su
gar and continue creaming
until light. Add well-beaten
eggs. Sift flour, baking pow
der and salt together and add
alternately with the milk.
Mix until well blended. Bake

ate oven, 350 degrees, one
hour.

Tomato-Onion Salad

For this delectable combina
tion of tomatoes and onion
slices, some perfectionists dip
the whole tomatoes - one at a
time - in rapidly boiling salt
ed water to cover and let
stand about 15 seconds; then
peel the tomatoes, remove and
discard the cores. We simply
slice the elegant thin-skinned
beefsteak tomatoes and pro
ceed like this.
2 or 3 large beeksteak to
matoes
1 medium size onion
3,4 cup salad oil
1 teaspoon grated lemon
peel
3 tablespoons lemon juice
1 teaspoon salt
Freshly ground black
pepper
ij teaspoon dried oregano
2 tablespoons anchovies,
finely chopped
6 tablespoons dairy sour
cream
Parsley for garnish
Slice tomatoes; chill. Peel
onion and cut into thin, al
most transparent slices. Com
bine the olive oil, lemon
peel, lemon juice, salt, pep
per, oregano and anchovy.
Garnish each serving of to
mato slices with the onion
rings and pour the anchovy
sauce over them. Put one
tablespoon of dairy sour
cream on top of each serving
and garnish with parsley. Six
servings.

No need to turn fish when it
is cooked this way and no oily

waysides on the Carpenter-ville-Brookings
section of the
Old Oregon Coast highway in
Curry county to Brookings
Plywood Co. for $386,000.
In the future the commis
sion decided that fishing
would be prohibited from the
Westford-Coyote creek bridge.
Warren slough bridge, Middle
Ford-Coyote creek bridge and
Coyote creek bridge on the
Mapleton Eugene highway
and on Fat Elk creek bridge
on the Coquille-Bandon high
way. All of the bridges are old,
have no walkways and have a
considerable amount of log
truck travel and commission

would be dangerous.
The request of the Linn
County Parks and Recreation
Commission to have the cov
ered bridge at Crawfordsville
given to the county as a park
or museum piece was ap
proved.
The transfer will be made
when the new bridge is com
pleted.
