The Cauliflower Is a
Pretty Ridiculous Vegetable
The cauliflower is about as
ridiculous as a vegetable can
get; actually it is a monstros
ity, an outlandish head of
flowerlets; cabbage - like in
taste to some small degree, but
quaint in shape and as temper
amental as it is unusual.
Peculiar that anything so
familiar to so many people
should be so unusual. Even
cauliflower experts, those who
know it best and make part
or all of their living by rais
ing it, cannot always predict
what the vegetable will do
under varying circumstances.
Climatic conditions must be
favorable if any degree of
success is to reward the grow
er. The vegetable must have
cool weather, otherwise it will

Without the head, there is no
cauliflower.
The head is produced by the
plant with some extra help
from the human grower who,
when the plant is young (that
is, when the flower cluster be
gins to form) gathers up some
of the outer leaves, brings
them together over the top
and ties them together with a
piece of raffia.
Choosy Plant
Inside the little leaf -tent
thus formed, the flower head
develops; white and tender.
The plant is choosy in its
preference both as to climate
and food requirements. It's
considered to be about as fin
icky as any plant in any gar
den or field.
The cauliflower is often
said to be a "deranged cab
bage" and like its relative the
cabbage contains some sul
phur compounds which pro
duce the disagreeable odor
when the vegetable is being
cooked. The cauliflower is
somewhat milder in flavor
than the cabbage and is said
to be more easily digested.
Technically it has a high
water-holding capacity. It is
an excellent source of calcium,
being about twice as rich in
this element as any other
vegetable.
The head of the cauliflower,
or that part which is supposed
to be washed or cooked in an
upside-down position, consists
of the flowers of the plant.
These flower parts are greatly
shortened and fleshy. So the
"head" is merely the flower
stalks, but, having been shad
ed by the tied-up leaves, it
becomes white, solid and ten
der. Cook Upside Down
Another and important
reason for cooking the head
in an upside down position is
the possibility that insects as
well as sand or bits of leaf
are pretty apt to be hidden
in among the little florets,
Soaking or cooking it in an
inverted position tends to dis
lodge all these unwelcome
visitors.
The enjoyment of eating
cauliflower, either raw or
cooked, is really not some
thing recently discovered, as
the ancient Greeks and early
Romans were known to be ex
ceedingly fond of this vege
table. Since then, of course,
the alert lovers of vegetables
have discovered many ways
to enhance the mild flavor of
this bizarre vegetable.
The cauliflower, as well as
the garden cabbage and broc
coli, too, is descended from
the original wild cabbage.
Actually, what you eat when
you enjoy cauliflower or broc
coli is the flower. These are
about the only two vegetables
that develop an edible flower,
and both are really botanical
monstrosities.

Finch Elected VP

Dick Finch, co-Owner of the
Home Appliance company,
Medford, was elected first
vice president of the Nation
al Appliance and Radio Deal
ers association (NARDO) at
the organization's annual con
vention in-Chicago last week.
finch was also elected to
his third three-year term on
the board of directors of the
organization. NARDO repre
sents an estimated 15,000 ap
pliance dealers throughout
the United States.
There are 30 members on
the board of directors, and
Finch is the only appliance
dealer from the Pacific North
west serving on the board at
the present time.

dall M. Gifford, have been in
ine appliance business in
Medford for 16 years, found
ing the Home Appliance com
pany here in 1945. Home Ap
pliance company (known as
Hapco) now has two stores in
Medford, two in Klamath
Falls and one in Ashland.

husbands who act lovey-dovey
in public may really hate
their wives and do nothing
but snarl at home. But Bert
insists he loves me. Then why
does he torture me in front of
my friends?

Bertram R. - Lola is sensi
tive when it comes to her own
feelings, but not mine. She
doesn't seem to realize that
she starts these unpleasant ex
changes by bringing up sub
jects she knows we don't
agree on. She waits until she
has the protection of our
friends, feeling I won't dare
to sound off in front of them.
Then she'll ask why I didn't
give her $50 for a dress or
whose fault it was that our
doe eot run over.

had just been bragging to our
friends about her etticiency.

was so piled up we'd have
been an hour late for the ap
pointment if I hadn't rolled up
my sleeves and got the mess
out of the way.
Sometimes I admit I tease
her when we're out. I want to
see if she can take it as well
as hand it out. But if she's
sore at me about anything,
she'd better hash it out with
me at home, instead of using
our friends as her bodyguard
and arguing in public.

on, listen and - worst of all -often
take sides!
How often has a pleasant so
cial engagement been spoiled
by the rancorous airing of a
marital grievance which one
of the mates didn't dare bring

when the most important
thoroughfare to connubial
peace is closed, the Avenue of
Communication. Some people
can thinn, teei, aream, qui
they just can't talk or be talk
ed to. In marriage, this leads
to all kinds of subterfuges and
underhand approaches. Lola

direct passages to each other
nd be brave and loving
enough to use them.
But a large part oi ine
blame for this relationship
must be laid at Bertram's feet.

frail fellow humans!)
No matter how well a hus
band and wife get along, no
matter how much they say
they love each other, they're
flops as mates unless tney
build up each other's "public
image." Its no use pulling

spouse trips one up. Marital
fidelity includes the "honor"
as well as the love and cherish
part of the vow. And it's
heartwarming all around to
hear one marriage partner
sing the praises of the other.

EVALUATION SIMULATOR - This scale

of Chance Voight Corporation is installing
at the Dallas, Tex., plant to develop control
and stabilization systems for space vehicles.
