J4 cup sugar
3 tablespoons flour '
'Vi cup table cream.
.Vi teaspoon ginger
Vj teaspoon nutmeg
Pastry for 1 crust.

' Prepare pastry and line pie
plate. Pare, core and thinly
slice 2 pears into unuaKcd pie
shell. Halve, pare and core
remaining pears. Place halves
cut-side down in circle with
stem ends toward center on
top of sliced pears. Combine
sugar, flour, cream, ginger
and nutmeg. Pour over pears.
Bake at 425 degrees, 40-45
minutes..
Glared Baker Pears
These baked pears come to
the table glazed and lovely
.to look upon. Serve them
warm, fresh from the oven.
Select firm Bosc or Anjou
pears; wash, halve and core
them. Place enough water in
baking dish to cover bottom
of pari; add 2 tablespoons lem-
'on Juice and any given num
ber of pear halves, cut side
down. Cover and bake at 375
degrees for 20 to 25 minutes.
Remove cover, turn pears
with cut side up; dot with but
ter. Sprinkle each half with
1 to 2 teaspoons suga and
spice or brown sugar. Return
to oven 10-15 minutes lo niv

' 51 cup boiling water
13 cup sugar
V4 teaspoon ground
cinnamon
8 teaspoons butler

Wash and core impeded
apples. Cut off one strip of
peecllng from top of apple
about 14 inch wide. Place in
a buttered 8x2 Inch round
: baking dish or one of com
parable size; add i cup hot
water. Mix sugar with clnna
'mnn and spoon Into apple
cavities. Add 1 teaspoon but

heated moderate oven, 350 de
grees, 20 minutes. Remove
.cover: baste with liquid
around apples. Continue cook
ing 35 to 40 minutes or until
apples are tender.
Cinnamon Toast Rounds,
Cut 6 slices bread Into 3 to 4
Inch rounds with a large
cooky cutter or other round
object as a glass or can.
Spread each with butter.
Place under broiler to toast.
Mix l'i tablespoons sugar
with hi teaspoon ground cin
namon and sprinkle over top
of each as soon as removed
from the broiler.

Bake Chapattiet
Chapattles are the modern
version of a thin griddle cake
of unleavened bread used in
North India. These are made
from refrigerated biscuit
rolled thin, brushed with
melted butter and sprinkled
with sesame or poppy seeds
or with grated Parmesan
cheese before' baking. Recipe
makes 10 good-size chapattles.
1 package refrigerator bis
cuils Butter
Sesame seeds, poppy seeds
andor Parmesan cheese
Place biscuits on large un-
grcascd cookie sheet. Roll and
pat out biscuits to 4 inches
in diameter. Brush with melt
ed butter; sprinkle with seeds
andor cheese. Might do some
one way, some another. Bake
at . 450 degrees, 8 ' minute
Bread will be rather soft and
chewy when first baked but
will crisp up if held overnight
at room temperature.
Cheese Tray '
A combination of cheese is
used for the dip for pears and
is accented with candied gin
ger. Soften one 8-ounce pack
age cream cheese; add 1
5-ounce jar Old English cheese
spread and 2 tablespoons can
dled ginger. Whip until light
and fluffy, adding cream as
necessary to make the mixture
light and of the right spread
ing consistency. Makes 2 cups
cheese spread for serving with
those luscious Bosc, Anjou or
Cornice pears.

by two companies that have
not diversified.
"It's a case of 'shoemaker,
stick to your last,' " the sur
vey .stated. The reason simply
is that the industry the dis
tillers were diversifying
away from proved to be more
profitable than the new fields
they were so eager to gambol
in.

spirits' in 1960 equalled the
record 231 million gallons set
in 1946.
With more individuals com
ing of legal age, a further
gain in consumption is a rea
sonable expectation for 1061.
Other favorable factors are
strong consumer purchasing
power and good general eco
nomic conditions.
The resumption of the trend
toward higher-priced bonded
and straight whiskies is aiding
dollar sales. Bottling of bond

blends were off 1.2 per cent
but still accounted for 42.6
per cent of total sales. Spirit
blends were down 1.8 per
cent in the same period, ac
counting for 51.2 per cent of
all whisky bottled, down from
51.5 per cent in 1959.
Over on the other side of
the competitive fence in the
brewing industry the picture
also is brightening. After a
decade of virtually level de
mand, the consumption of
beer is expected to expand
anew in the 1960s as the popu
lation profile changes.
Increased sales and earn
ings are in prospect' for the
brewing industry, Value Line
said.
At the same time, it noted
that a progressively larger
share of the nation's beer pro
duction is being concentrated
in fewer and stronger hands.
The small regional brewery
is rapidly becoming a rarity.
