We west coasters give
thanks every day in the year
for our abundance of coast
caught fish and shellfish. Tlicy
will appear especially often
on menus for the next few
months. There are oysters
and clams for offering as first
course on the half-shell and
there's crabmcat, lobster meat
and shrimp for tantalizing
the appetite in lettuce-lined
individual glasses.
We suggest two sauces for
alternating or for offering
both if the party is large and
buffet. Keep all ingredients
chilled until table time, Sauce
for six servings.
Blend and chill one table
spoon grated horseradish, one
half cup tomato ketchup, six
tablespoons lemon Juice, three
drops Tabasco sauce, one-
eighth teaspoon salt and one
half teaspoon celery salt.
Or blend and chill one-half
cup catsup, one tablespoon
lemon juice, dash of Tabasco
sauce, one-half tablespoon
horseradish, one-half teaspoon
Worcestershire sauce, one
half tablespoon minced cel
ery, one-half tablespoon grat
ed onion and one-half tea
spoon salt.
Traditional vegetable for
Thanksgiving dinner is
creamed onions, no matter
what meat is served. We make
this a dish to remember by
adding a three-ounce package
of Philadelphia cream cheese
and some diced canned pl
miento (optional) to the white
sauce.
Figure two pounds small
onions for six servings. Cook
peeled onions In rather deep,
boiling salted water, uncov
ered, about 30 minutes; drain.
Add onions to a well-seasoned
white sauce with the
cream cheese added. Onions
may be cooked day before;
added to cream sauce at serv
ing time If you're looking for
time savers.
Spice Coke Topping
Instead of icing your next
spice cake or spice cup cakes
try pouring a combination of
one-third cup orange Juice
and one-third cup honey dt
rectly over the hot cake. Let
cook in pan.
Now Is the season for en
joying fresh Brussel sprouts,
They're delicious served with
lemon, curry or almond but
ter; with hollandalso, cheese
or dairy sour cream sauce,
Brussel sprouts take well to
these spices; sweet basil, cara
way seed, dill, dry mustard
and nutmeg.
But If you dare to be differ
ent; want to offer a treat
worthy of a special holiday
menu, we suggest that you fix
them . . . with water chest
nuts.
For six servings, cook three
cups brussel sprouts about 10
minutes In 2VS cups water to
which you've added three
bouillon cubes. Add three me
dium carrots cut in long thin
strips, three stalks celery cut
In long thin strips; add one
large onion, finely chopped.
Simmer until all are tender,
about 10 minutes. Drain, re
serving one-half cup of the
liquid.
Combine liquid with three
quarter to one cup peeled and
boiled chestnuts, one-hulf
teaspoon salt, one-eighth tea
SDOon ground black pepper,
three tablespoons butter and
one tablespoon fresh lemon
Juice. Add sprouts and bring
to gentle simmer.
Cranberry sauce, fancied
up In ways like these, can
play many parts-as entree
relish, salad dressing, cake
frosting or sundae topping.
Simply combine Ingredients;
chill.
One can whole cranberry
sauce, one-half cup sauce and
one-half teaspoon cinnamon.
One can Jellied sauce, one
half cup apple sauce, one-

seduce the heroine with equal
fervor.

roast the turkey because the
fumily is crazy about the stuf
fing and gravy. Wonderful

the turkey well ahead of time
for defrosting, if necessary.

dered movie hero represented
the kind of guy with whom
men could drink and gamble.
To women he epitomized man
liness, roughshod when nec
essary, gentle when it counted.
For movie fans he WAS
Fletcher Christian in "Mutiny
on the Bounty" and he WAS
Rhett Butler.
Few stars in history gave so
much to their roles. As a re
sult Gable, of the trim mus
tache, big ears and lopsided
grin, became a legend in his
own time
Legend Grows
Because of his five mar
riages and frequent romances,
the legend grew. To those
who didn't know him he was
a mythical giant cutting a
swath through celluloid and
feminine hearts with nary a
thought of home and hearth.
The myth of Clark Gable'i
helped the box office, and
Gable went along with it.
In the early days, after his ;
divorce from Josephine Dillon j
in 1030, Clark lived up to his
reputation. H e ' frequented
night clubs, indulged in a few
typical off-screen Hollywood
"fights" - one-punch affairs,
after which the combatants
sobered up and shook hands.
And he dated the sexiest star
lets of the times.
He became a social "lion"
among hostesses during the
depression years and fair game
for husband-hunting actresses.
As his fame grew and his
pictures ran rampant at the
box office Gable changed. His
success gradually transformed
him from the rough oil field
hand to a polished, self-effacing
and hard-working actor.
Although he was a star,
Gable's ability as a performer
was taken lightly. Then, In
1034, he won his first and
only Oscar for "It Happened
One Night," and the industry
began to take him seriously.
For 10 years he swaggered
among the top 10 stars, mak
ing such hits as "Hell Divers,"
"Strange Interlude," "China
Seas," "San Francisco," "Too
Hot to Handle," and "Honky
Tonk."
Actresses vied to work in
his pictures, and his leading
ladies through the years were
the best in Hollywood -Claa
dette Colbert, Jean Harlow,
Lana Turner, Vivian Leigh,
Greer Garson and Deborah
Kerr.
For most of his career, In
which he starred in more than
50 films, Gable was under
contract to Mclro-Goldwyn-Mayer
Studios. During that
time the studio built up its
No. 1 star to jibe with the
public Image
His many hunting and fish
ing excursions were well-publicized.
And Gable created
something of a panic in the
undershirt industry when he
peeled off his shirt in "It
Happened One Night" to be
photographed bare chested.
Lives Quiet Life
Gable's pictures earned
some $65 million, and his per
sonal fortune grew.
Expensive sports cars were
his one great luxury. He loved
sleek Imported models and
owned one of the first Jaguar
sports cars in the United
States.
But for the past 20 years
the "king" of the movies lived
a quiet, sedate life on his 20
acre ranch in Encino, about a
half-hour's drive through the
San Fernando Valley from
Hollywood.
There, among his orange
trees and rambling Spanish
style home, Gable spent his
free time lounging by his
swimming pool.
Whenever the legend of Ga
ble was mentioned he would
flash his famous grin, tinged
with sheeplshness, and say, "If
I did all the tilings I'm credit
ed with doing I'd have to be
three guys.
"But it makes a good
story," he told me recently,
"and I always like a good
story."

Watch the Wooly Bear
For Signs of Winter Weather
When the season is about
to change for the downhill
slide into winter, some people
begin to look for signs that
will Indicate what the pros
pects are for a mild winter.
We notice creatures of the
wild and draw from their
actions our ideas of what is
in store.
We observe closely the mi
gration of high-flying water
fowl; the thickness of the
husks on the hickory nuts;
how heavy the fur is on the
muskrat's body or the amount
of food the squirrel has laid
away.
Some of us watch the
"woolly bear," to see if he
is fortified with a heavy corp
of hair.
Serious Believers
The "woolly bear" advo
cates are many, and every
year someone observes that
we are "in for a dilly of a
winter." Of course you really
believe In the "woolly bear"
legend or you don't. But if
you do, there is absolutely
no legitimate reason why you
should bother ever to read a
weather report or listen to a
radio: you've got the dope,
accurate and dependable. That
is how serious the "woolly
bear" believers are; they
think the "woolly bear"
knows.
If you don't believe, you
may even not know what a
"woolly bear" is - it's not a
bear; neither Is it woolly. It
is a caterpillar, a very hairy,

Receives Promotion

H. Dougherty has been pro
moted to the position of tim
ber management officer of
the Shasta-Trinity National
forests, effective Dec. 25.
Dougherty replaces Norman
E. Dole, Jr., who is being
transferred to the staff of the
regional forester in San Fran
cisco. Dougherty graduated from
Medford High school in 1D36.
He is a graduate of Oregon
State college, graduating in
1941. He and his family have
been living in Redding since
1947.
Since 1957, Daugherty has
been a forester in the super
visor's office, assigned to man
agement plan preparation, re
forestation, stand improve
ment and cruising.
He is the son of Mr. and
Mrs. R. J. Rinabarger, 136

fortable place to curl up, it
will go to sleep and emerge
in the following spring as a
tiger moth.
None in Summer
The "woolly bear" has a
rather plump body covered
with black or brown bristles.
Sometimes the forward end
is brown and the rear end
black, or vice-versa. During
the early summer there are
no 'woolly bears": they come
later and become noticeable
when we see them crawling
across the pavement or side
walk. They may be found,
too, crawling up screen doors.
The next day someone says,
"The 'Woolly bears are fore
casting a mild winter."
Watch Out
If the geese go south early;
the squirrels bury more nuts;
the fur is thick on the rac
coon's back, and the woolly
bear looks like a brand new
tooth brush without a handle,
then watch out. The mercury
In the thermometer snuggles
down in the bottom of the
tube, everything will freeze
up, or so they say.
The folks who believe in
the "woolly bear" brand of
weather forecasting will glad
ly tell you how often man-
made weather predictions go
haywire; so the "woolly bear
can be excused if he mistakes
a cold winter for a mild one
once in a while.
Even the human weather
man with all his complicated
gadgets can't claim to be right
very often; he, too, just reads
the dials, figures the percent
ages and entertains "wild
hopes."
